1. Boil 1300g of milk with 280g of rice, and add and 220g of sugar and 1 stick of cinnamon and cook over low heat until it has absorbed all the milk and is thicker than a risotto.
2. Stir the rice into the milk regularly.
3.When it reaches the same consistency as mine, take it out of the heat and let it cool.
4.When cold, prepare the eggs.
5. Break and separate 5 eggs.
Remove the cinnamon then add the cold rice pudding to the egg yolks.
6. Mix the egg yolks well with the rice pudding.
7. Add -80g of raisins is optional, you can flavor the rice as you like with other citrus fruits, raisins, nuts or plain without dried fruits ... it's up to you.
8. Add vanilla flavoring.
9. Add zest of a grated orange or lemon whichever you prefer. Then mix it all.
10. Whip the egg whites until stiff.
11. Add them little by little until you obtain a homogeneous mixture.
12. Pour into a mold of your choice.
13. Using a baguette, toss gently to even out the rice throughout the pan.
14. Oven preheated to 170 ° C and bake for 45 to 50 minutes. the surface should color or even brown, but the core should not dry out.
15. Let cool before unmolding.
16. Dust the rice pudding cake with icing sugar before serving.
