I've simplified my diet no fancy recipes just oatmeal for breakfast, a wheat tortilla with beans ,rice or tofu for lunch and a simple wheat pasta with broccoli or mushrooms with a sour dough bread , on weekends I might grill some veggies with plant based burgers or eat some loaded sweet potatoes .

The eat actual food comment made me laugh so hard. I cannot eat that much food in a meal even with all that lettuce. Four mangoes and eating a bunch of bananas would make my blood sugar Spike through the roof.

That meal would make my blood glucose stay low. What a fantastic approach…. you use the mango as a sauce for more bitter arugula! And arugula is about the best of the best foods you could possibly eat. It’s easy to grow too…just a pot and seeds or seedlings and soil and water…and sun…goes crazy. Love the video thanks

Seldom if ever does anyone eat like this....once in awhile maybe but not at all meals consistently everyday. There is enough glucose there to satiate for a few hours but not realistic for most ppl.

I was just thinking that I would have added tofu or grilled chicken and maybe sauteed the spinach and arugula to make it a little tastier but this is super healthy eating...

@@kendraheard1097 It is healthy for the most part, but protein is essential for good health. People under estimate how much muscle mass you can lose on a plant based diet. I've been vegetarian for almost 20 years, and I make sure I get at-least 20 grams of protein at each meal. I'm rarely hungry enough to eat 3 meals a day, so I added a protein shake that contains 20 grams of hemp protein, and another 10 grams of protein from vegetarian collagen which is made from eggs. That plus 2 meals, and I get round 70 grams of protein per day.
