The best pans are stainless steel pans. Forget all non-stick coated pans and also the Hybrit pans (Hexclad). The coating will soak into your food over time and you will absorb it. I don't want that crap in me. And that's how you use stainless steel pans!!! Place the cold stainless steel pan on the stove and add approx. 2 to 3 tablespoons of heat-resistant oil (e.g. sunflower oil or coconut oil) to the pan. The oil should cover the entire surface of the pan, swirl the pan if necessary. Now heat the pan at 75% of the oven heat until the oil starts to smoke slightly. Now remove the pan from the oven and leave to cool. Now nothing will stick to the pan. You can now also work at a low temperature. For example, you can now pour off the oil and add butter to the pan. After frying, clean the pan with some paper. The non-stick effect remains! If the pan is very dirty and needs to be cleaned with washing-up liquid, the pan must be reheated as described above.
