Re: Bagels from China - When I was a freshman at Cooper Union, my physics teacher described a torus (not Taurus, nor tsuris) as an object shaped like a bagel. A Chinese student tentatively raised his hand to ask: "Excuse me, but what is "bagel?" The professor thought for a few moments and replied: "A bagel is a wonton of revolution." One thing Tom might have mentioned is that the bagels of the 1960s and before were smaller and harder than today's relatively big and soft ones. Bagel purists might complain, but it's popularity today has to do with that change.

I'm originally from New York and spent 50 years of my life there. Trust me I know the difference and I miss New York Bagels but there is also plenty I don't miss about New York LOL . That said I'll say that Einstein Bagel is a door stopper if you are living in New york but it is a taste of heaven if you are living outside of New York 🥸🧐

You have to not hold it in a vertical position in a cutting board with only your fingertips on the top straddling the two sides and use a bread knife down the middle to slice downwards. If you take a frozen bagel out of the freezer it’s best to defrost them in a microwave for a half to thre quarters of a minute and then toast them.

Most food from New York is extremely overrated and you can get equally, if not better versions of it outside of the city, except for bagels and cheesecake! It’s just so much better there

It was true at one point in time. NYC had a lot a competition and actual immigrants making their countrys dish. It was a lot more authentic than someone that has never left wisconsin making the same dish. But these days with the Internet, anyone can learn to make these dishes.

Not sure about the Kraft , Philadelphia cream cheese and the bagel theory because I was born in 1968 in Southern California in a non Jewish home and bagels and Philadelphia cream cheese were a staple in my house all through the 70’s and 80’s

FYI- because of the bagel's density the hole allows it to bake evenly by removing the center, which is the last part to bake for everything.

You never know. I’m a native New Yorker living in Southern Florida and people tell me that they don’t know where to find good bagels or pizza and I know of at least six great places to get bagels in two counties and about ten incredible pizza parlors and restaurants.

As I remember it, H&H makes a good bagel. I moved back to Manhattan two years ago and I haven’t bought a bagel. Bad girl. “H&H Bagels was founded in New York City in 1972. I was just in New York and tried four different places for the best Lox and Bagel including Murray's and Russ & Daughters. The winner? Ess-a Bagel. The bagel was good, but the Nova was supreme!
