What up friends and Merry Christmas! This year I wanted to brew a beer that would blend in with our Christmas decorations and pair well with my charcuterie board! Hello red ale, a rich malty beer with citrus and holiday flavors and aromas. There's enough hops to provide a citrus aroma and bite, but balanced well for the malt to shine.
Who knows at this point how the beer will turn out, but I certainly have high hopes. Below is the grain bill and recipe should any of you want to follow along and brew this yourselves, or even tweak to your liking!
Recipe:
7.25 gallons distilled water
8 lbs. English Maris Otter
1 lb. Torrified Wheat
1.5 lbs. Ashburne Mild
0.5 lbs. English Dark Crystal
0.25 lbs. Bairds Canastan Malt
0.25 lbs. Fawcett Pale Chocolate Malt
Mash Rest 60 min. @ 152 degrees F
Hops:
0.75 oz. US Magnum (60 min.)
1 oz. Styrian Goldings (10 min.)
1 oz. Sweet Orange Peel (0 min.)
1 Whirlfloc tablet (15 min.)
Yeast: SafAle S04
Ferment at 68 degrees F
