I tried this too, and upon further inspection of the burger I got from MD, the patty is a quarter pound cooked, so I needed to start with 1.25 times as much raw beef (i.e. 5 oz.) to account for the 25% shrinkage caused by cooking the patty. Melting the cheese on the patty right at the end of the pan frying step, and melting a slice onto the bottom bun right after the bread toasting step also produced good results. My Basic order of operations was the mise-en-place of everything, including the shaping and seasoning with S+P of the patty, pan frying the patty and melting the patty cheese, toasting of the buns and melting the bun cheese, and final assembly. couldn't have taken more than 30min to make 2 of them.

You should have put the cheese on the burger while it was cooking and always toast the buns first before cooking the burger. And use American cheese, not cheddar.

Interesting thought wondering if you could do International versions of the quarter pounder included the Royale to make it even Royal

ive been experiementing with different styles of cooking burgers. since I started the carnivore diet 3 years ago eating only meat I wanted my food to taste good lol. and Ive found based on my experience that 73/27 makes the best tasting burgers by far. then 80/20. btw mcdonalds is perfect if your to lazy to cook cause Dr Anthony chaffee said they use 100% real beef. and there in most countries so when traveling if u want to continue the carnivore diet just hit up mconalds and ask for only the patties lol. i eat regularly at mcdonalds but I never buy the fries only the quarter pounders. because fries are cooked in seed oils the root of all evil lol.

How come my home quarter pounder (weighed when raw) is so much larger than McD's? Is it because I use 85/15 beef? Does McD compress the heck out of theirs for shipping? Buehler?

You used cheddar cheese?

Ya. I would have used American cheese cause I think that’s more authentic McDonald’s but it’s hard to find where I live

Used the wrong cheese. It's supposed to be american cheese for the quarter pounder.
