Diacetyl is one of the most common off-flavors in beer. It is especially common in homebrewing, where complete control over fermentation is not always an option. It is notorious for giving beer a characteristic, buttery flavor. While it is common (and even desired) for diacetyl to be present in certain wines, it is almost always a flaw in beer.
I am no stranger to diacetyl and unfortunately I have experienced it firsthand in a few of my beers. There are several ways to prevent diacetyl from occurring in your packaged beer. I have tried most of them with varying results. The unfortunate thing is that diacetyl is almost never detected until after the beer has been packaged. Once diacetyl is in your packaged beer it is practically impossible to remove.
Using this simple technique, you can dramatically minimize the likelihood of diacetyl making it into your packaged beers, saving both time, money and frust
