2000g pork shoulder
Salt (1.5%) 30g
White pepper (.5%) 10g
Garlic powder (.5%) 10g
Ground mustard (.3%) 6g
Ground coriander (.3%) 6g
Ground carraway (.3%) 6g
Ground ginger (.25%) 5g
Ground thyme(.125%) 2.5g
Ground Allspice (.125%) 2.5g
Milk powder (3%) 60g
Heavy cream (10%) 200g
2 large diced jalapeno (for half the batch)
Diced sharp cheddar (10%) 100g (for half the batch)
Mix then split in half
Add cheddar and jalapeños to one half
Stuff into casings
Refrigerate overnight
Vac seal or cook
