I'm Victor, and I really like to cook. With my "In the Kitchen" series, I'm going to be showcasing some of my favorite things I grew up on at home. In this first episode in the kitchen, I'll be cooking cha siu, one of my favorite Chinese dishes ever. Generally barbecued over fire or roasted in the oven at higher temps, I'm going to try cooking a few different cuts of pork in my smoker low and slow, Texas-style. I'm obsessed with Texas BBQ and love to smoke meats, and wanted to see how cha siu would turn out with Texas BBQ techniques. With all the extra cha siu, I try making a few different things with them too.
