For the mousse:
Whipping cream: ¾ cup (200 grams)
Mascarpone: ½ cup (100 grams)
Whole wheat cookies (I used 6 of them) or graham crackers
We’ll start by melting the sugar over low heat, then carefully mixing in the cream and butter. Once everything is well combined, we’ll add a pinch of salt for that extra flavor. The caramel is then allowed to cool before being whipped into a fluffy and creamy mousse. To assemble the dessert, we’ll layer cookie crumbs, caramel, and the caramel mousse in dessert cups. This recipe makes 6-8 dessert cups, depending on the size of your glasses.
