Fried dace with salted black beans originated in Guangzhou in China. In the past before industrialization of China in the 1950s begun, many Chinese from the pearl river delta region needed to go to Southeast Asia for work. They would fry the dace preserve it with salted black beans and bring it with them because they were not used to eating foreign food. This tradition gradually transformed into a canned food business. But in 2005 the HongKong food and environmental hygiene department tested 26 samples of food in which some of the samples of the canned fried dace with salted black beans were tested positive for malachite green, a carcinogenic chemical. Because of this we should do this ourselves (DIY) and this recipe is easy as a piece of cake...but of course you need a pressure cooker to cook the fishes until the bones are soft melt-in -mouth and can be eaten.
INGREDIENTS
8 medium dace (11/2-2 kg ) or any type of fishes of your choice
1 tsp salt to marinate fishes
2 cups oil to fry the fishes until crispy
2 tbsp finely chopped garlic
2 tbsp finely chopped ginger
60g black fermented beans
11/2 tbsp premium thick soy sauce
2 tbsp light soy sauce
2 tbsp brown sugar
2 -21/2 cups of water
