Hey everyone, welcome back to our cooking channel! Today, we're taking a trip to the Emerald Isle and diving into the delicious world of Irish cuisine. But hold on to your taste buds because we're putting a twist on a classic favorite! Get ready for the ultimate comfort food experience - Irish Nachos!
Let's start with the recipe. Here are the ingredients you'll need:
- 2 to 3 lb Corned Beef Brisket (shredded)
- 4 lbs Yukon Gold potatoes cut into 1/4" rounds
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Kosher salt
- Freshly ground black pepper
- 1 cup shredded yellow cheddar
- 1 cup shredded white cheddar
- 1 can black beans, rinsed and drained
- 1/2 small red onion, thinly sliced
- 1/2 cup sour cream
- 1 tablespoon horseradish
- Pickled jalapenos, sliced
Now, before we begin, let's talk about the star ingredient - potatoes! Ireland is known for its love affair with spuds, and this recipe really showcases their versatility. Instead of traditional tortilla chips, we'll be using thinly sliced and crisped potatoes as the base of our nachos. Trust me, once you try these, you won't look back!
Instructions:
Preheat oven to 425 degrees F.
In a large pot, cover potatoes with water. Bring to a boil over high heat and cook until just starting to get tender and a knife inserted into the center meets a little resistance, about 5 minutes. Drain and pat dry with paper towels.
Line 2 large baking sheets with foil. Divide the potatoes between the sheets, spreading in an even layer. Drizzle with oil. Add oregano and garlic powder; season with salt and pepper, then gently toss to coat.
Bake potatoes until golden brown and crisp, about 30 minutes.
On one sheet, pile potatoes in the center, slightly overlapping so they're close together. Sprinkle about half the yellow and half the white cheddar over the potatoes. Top with half of the shredded corned beef, half the beans, and half of the onion. Arrange potatoes from second sheet over the top, then top with remaining cheese, beef, beans, and onion.
Return to the oven and bake nachos until cheese is melty, about 5 minutes.
In a small bowl, combine sour cream and horseradish. Top nachos w/sour cream mixture and serve.
