We are going to prepare a Japanese basic that little resembles the version that we know in the rest of the world: Japanese mayonnaise.
Unlike ours, this mayonnaise is prepared using ONLY the egg yolks and also contains ingredients that are rare in our version ... such as rice vinegar or mustard.
Ingredients:
- 2 egg yolks
- 20g Dijon mustard
- 250ml of sunflower oil
- 10 ml of rice vinegar
- 10 ml of yuzu or lemon juice
- 10 g of sugar
- 40 ml dashi broth
- 1 pinch of salt
