This recipe is a modernized version of the cookie that was baked in 1969. Why adapted? Well, at least because I haven’t seen maize starch on sale (modern corn starch is different), and the flour is different now. If you do it with the amount of flour that was originally indicated in the technical card (I did it), the cookies will turn out bad. You get an unattractive and tasteless butter crouton stuffed with flour.

Ingredients:
400 g white all-purpose flour (may need a little more)
45 g cornstarch
180 g powdered sugar
24 g of any invert sugar (invert syrup, trimoline, glucose syrup, any honey with a taste neutral)
216 g softened butter 82.5% fat
21g milk
30 g melange (approximately equal amount of protein and yolk beat with a fork until smooth and measure 30 grams)
5 g vanilla sugar with natural vanilla (or plain vanilla sugar, not vanillin)
4 g baking soda
4 g apple cider vinegar
5 g baking powder
2g fine salt
