Traditionally, lard with cracklings is made by long and time-consuming melting at high temperature. Today I will show you a less absorbing way. It also takes a long time, but most of that time is waiting, and there is little work. A ham cooker will be helpful.
At one time I make lard with cracklings for spreading on bread and a portion of lard for frying or baking, because there are dishes that look much better with lard than with other fats.
