"Rinse them with water to remove the extra starch." "Now, put them in a bowl and stir in some extra starch." I'm sure there's some kind of reason for this, some difference between potato and corn starches, but I found it slightly perplexing, as well as humorous.
@teridoster5840
3 жыл бұрын
Cornstarch and potato starch have very different properties. The starches inside the potatoes don't help crisp. They convert to sugar and promote browning. If you leave the starch on them, they will turn very dark brown before they crisp up. They also have a tendency to turn an unappetizing grey color on all the cut edges, which would be hugely noticeable inside something like hash browns with all the little potato bits having hundreds of cut edges. Also, not rinsing the potato starch off can leave you with a gummy interior, whereas cornstarch absorbs some of the moisture and holds them together without causing the gummy texture 😉

A couple of tips for these - If you're using a skillet rather than a deep fryer, just make sure you have enough oil for the patties to float a bit. If they rest on the pan, they scorch very quickly. These also freeze very well if you wrap each one in plastic wrap to keep them from forming crystals, then store them in whatever container is practical for your freezer. Just don't fry them and then freeze; you only get mush lol. Form, freeze, then fry.

Chances are the in restaurant versions are more complicated then this. I wudnt be shocked if mcdonalds is using a very specific kind of potato with the exact starch ratio they need and sourcing that potato is likely hard except for when one is mcdonalds. That and they most definitely add more seasonings than just salt to their potatoes. Likely the person is only used to cooking it on a huge grill surface in large batches and just thinks it wud take way too long to make that. I imagine this specific task is a daily task that takes a worker or two about an hrs worth of work to prep for hash browns needed for just their far too short brkfast window. So to many folks that wud just seem like way too much complication considering the oreida ones will taste almost as good, and as good if ya top them with msg and cheese

If the frying is a major issue for yall, and i get that and wudnt judge for it, then there's always air fryers and they can cook these up just as tasty... I wud just then recommend A: adding some more oil (or even butter) for the initial cooking and shaping, this is just for flavour rly as the air fryer wont have the oil infused flavour otherwise. 2: Going the cheese stuffd route or even adding other stuffing ideas (like jalapeños as another person suggestd) and more seasonings than just salt. This will make a different kind of hash brown but i betcha it tastes as good. Its rly prty much baking them, but it does it at more frying pan heat levels than your oven will ever hit. Tho you cud also stick the hash browns under your oven's grill (what American's wud call a broiler) and watch them closely and flip when they get colour. This will give you more of a roasted hash brown flavour but can cook up rly fast like a frying pan wud and avoids the scaryness of working with hot dripping oil 🔥 Or just bake them and get subpar hash browns.

Compost love. I'm happy to say I had familiarity with compost growing up. The very simple version back then for backyard plots of veggies and fruits. Now Composting doesn't smell nearly as much, which combined with the resurgence in interest in sustainability, has made it accessible, popular, and to some degree in vogue. You can use your vegetable scraps to make stock before you compost them! I keep mine in a gallon bag in the freezer until it's full (usually just under a week), then boil in a large pot until they're pretty mushy. Strain them out, then compost. To avoid getting too much stock, boil it after the straining and make a stick concentrate. You can even keep the stock in the freezer and keep making it stronger and stronger.

Great video! I used to make potato pancakes the same way except I just grated the raw potatoes into a bowl and added 1 egg and some flour to thicken up the grated potatoes and a little bit of seasoning salt. I didn't cook the potato twice like you did either. I just used a tablespoon and placed a tablespoon of grated potatoes into a hot cast iron pan and cooked the potato pancakes till they were a golden brown color. Less waste I guess and faster except the uncooked grated potatoes will turn brown quicker due to being exposed to the surrounding air.

I don't compost, since I don't have much of a yard to use it in, but I do throw a lot of my critter-friendly food scraps (fruit peels, veggie tops/stems, bread crumbs, etc.) to the birds and squirrels.

I've tried making hash browns a few times and they never come out right. Those look perfect. Definetly will try this soon! Thanks

I love how Emmy enjoys her creations. I love McDonald's hash browns, and can't wait to make them. Yes, all homemade food tastes much better than the fast food joints. Keep up the good work Emmy.

Here in Atlantic Canada there’s a company called Cavendish Farms that makes everything potato... including hash brown patties like MacDonalds has (and ones with onion in them)... so good! We buy them often.

My city collects food scraps for composting as part of garbage collection. We have three bins...garbage, recycle, and food / yard waste for composting.

Dear Emmy. You are already a genius, but if anyone else is reading this, my top for perfectly rolled out hash brown patties, cookies, or burger patties, is to set a DVD or a CD case beside the roller ensuring that the thickness is regulated to the width of a CD or DVD, since most people have those around the house, they make great rolling guides for total perfection. :)

Love to compost! We put our daily scraps in the freezer until we have a bunch and then dump it in our compost bin. To help prevent smell, adding paper or cardboard and turning it works great! We don’t have a huge yard so this really works great.

Really a great video. You mentioning that McDonald's uses lard in their hashbrowns sheds a ton of light on a physical issue with them. I also wonder if it isn't that way with other FF places. Thank you for such a great video. p.s. We use Cornstarch in breading for fish and other items to add that crunch. It's amazing!

Thank you sooooooo sooooo much for posting this!!!! My hubby works for McD's and I used to, and used to love their hashbrowns but I have celiac disease and can't have them since they aren't gluten free. I'm definitely going to be trying this!
