In today’s video, I’ll show you three simple recipes for homemade meat alternatives. We’ll start with a spicy 'beef,' followed by a Japanese rice bowl with a fish alternative, and finish with a Shanghai-style 'chicken.' The ingredients are easy to find, and cooking them is fun! Vegan Five-Spice “Beef” [Side Dish for Bread, Rice, Noodles]
Ingredients:
(2-3 servings)
70 g large soy medallions or soy shreds
For the Five-Spice Marinade:
1 tbsp fennel seeds
1 tsp Sichuan peppercorns
2 cm cinnamon stick
2 star anise
2 dried red chilies
2 bay leaves
3 cardamom pods
3 cloves
1 nutmeg, 3 pieces of licorice (these two spices can be omitted if not available)
5 slices ginger
2 garlic cloves
1 tbsp dark soy sauce
1 tbsp rock sugar or sugar
1 tsp white pepper powder
1 tsp salt
For the Dressing:
1 tbsp roasted sesame seeds
1 tsp sugar
1 tsp Sichuan pepper powder
1 tbsp homemade chili oil
1 tsp roasted sesame oil

Vegan Fish
Ingredients:
200 g plain tofu
40 g cooked sweet potato
2 tsp cornstarch
1 tbsp soy sauce
1 sheet sushi nori
1 tbsp roasted sesame seeds
2 tbsp oil
1 tbsp cooking wine (or gin, white wine)
1 tbsp mirin (or white wine, sherry)
Salt, sugar
Vegan Chicken with Tofu Sheets
Ingredients:
(2 servings)
250 g Baiye tofu (tofu sheet, bean curd sheet)
1 star anise, 1 bay leaf
1 tsp salt
1/2 tsp baking powder
1 tbsp roasted sesame oil
For the Dip Sauce:
2 bell peppers
2 garlic cloves
1 tbsp oil
2 tbsp light soy sauce
1 tsp sugar
100 ml water
