Thank you for the video! What alcohol strength is the Rice Shochu you are adding? Doesn't alcohol interfere with koji's work at all? There is a recipe that also adds salt, did you do this?

Rice Shochu strength is about 25%. For making MIRIN, not effect the KOJI works, need to use high strength alcohol. In Japan, basically people can not make the homemade alcohol at home, so that add bit salt in it, makes ingredients not alcohol for drink.
