It is helpful to prepare all your ingredients for this recipe ahead of time.
Mix seasoning for soup and then set aside:
3 TBS sugar
2 tsp basil
1 1/2 tsp thyme
1 1/2 tsp oregano
1 tsp rosemary
1 -2 pounds stew beef (or any kind of beef cut in bite size pieces)
Season with:
3 TBS flour
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
Heat 2 TBS olive oil in a big pot. Brown beef on all sides. You may need to do batches so you don't crowd the pot. Remove beef from pot.
In the same pot add another TBS of olive oil. Add one chopped onion and cook for 2-3 minutes until onion is tender.
Then add 1 cup celery and 1 1/2 cups carrots (cut in small pieces). Cook on medium heat for 3-4 minutes until just starting to get tender.
Add:
4 minced garlic cloves
1/2 can tomato paste (3-4 ounces)
1 TBS Beef Bouillon
Stir until well combined
Add:
1 14.5 ounce can petite diced tomatoes
1 14.5 ounce can tomato sauce
Seasoning
juice from 1/2 lemon (about 1 TBS)
7 cups beef broth (I used salted)
2 bay leaves
browned beef
Bring to a boil and simmer covered for 45 minutes - 1 hour
Then add:
5 red potatoes (cut in bite sized pieces)
1 1/2 cups fresh green beans (snapped in small pieces)
Cover and simmer for 20-30 minutes until veggies are almost done
Add 1 1/2 cups frozen peas and 1 1/2 cups frozen corn.
Simmer an additional 10-15 minutes.
