Ingredients for Puri Aloo Curry:
(Tsp-Teaspoon; Tbsp-Tablespoon)
Boiled potatoes - 3 small
Tempering :
- Mustard seeds -1 tsp
- Cumin seeds -1/2 tsp
- Chana dal- 1 tbsp
- Ginger, fine chopped- 1 tsp
- Curry leaves- 15-20
Spice Powder:
- Turmeric powder -1/2 tsp
Besan mix:
- Besan- 2 tbsp
- Water- 1/2 cup
Other Ingredients:
- Onions, sliced-2 big ( 180-200 gms)
- Green chillies, cut & slit -3-4
- Dried red chillies- 2-3
- Coriander leaves chopped -2 tbsp
- Salt- 1 tsp
- Water- with onion 300 ml+ besan mix. 1/2 cup+ after adding besan mix 1 cup
Preparation:
- Boil the potatoes, peel the skin and roughly mash it.
- Also slice the onions, cut & slit the green chillies and chop the coriander leaves.
- Mix the besan in 1/2 cup water and se aside for use later.
Process:
- Heat oil in a kadhai and add the mustard seeds, cumin seeds and chana dal. Give a stir and then add the chopped ginger.
- Give a stir again and then add the sliced onions. Give a stir and then add the curry leaves, green chillies and red chillies. Also add the turmeric powder.
- Give a stir and fry for 2-3 mins.
- Now add 300 ml water and cook on medium heat for 2-3 mins.
- Add the besan mixed in 1/2 cup water and cook for a minute.
- Now add the partly mashed boiled potatoes and 1 tsp salt and cook for around 2 minutes.
- Garnish with chopped coriander leaves and serve with hot poori.
