When I start to run low on groceries, I'll look in the pantry and fridge to see what I have. Then I give a list of on-hand ingredients to Chat GPT and ask it to recommend recipes I can make with what I have.

Since I started to live alone I cook almost everything at home. I also became so passionate about cooking, becoming better at it, making better and better dishes, so much so that it is now difficult to find a restaurant that satisfies me 😅. In my opinion, the real secret to always cooking at home are "multi-flavor" dishes. They are those dishes in which the base is always the same (easy and fast to cook) but which completely change with a taste or a sauce. Pasta is obviously one of these dishes. Pasta with tomato sauce, with oil and Parmesan, with pesto, with cherry tomatoes, cream and ham, carbonara, amatriciana, butter and sage, with Bolognese sauce, etc... practically with pasta you go on the safe side. The fantastic thing about pasta is that it is also cheap and the same sauce on a different type of pasta can totally change the feeling of the dish. And there are many shapes of pasta, as well as fresh egg pasta and filled pasta. For ragù and other sauces like homemade tomato sauce, my ultra-simple version is usually: Make a big pot Divide it into single portions Freeze single portions So I only work once and have sauces for a lot of time. Like all winter time, because if you make tomato sauce in the summer it will taste a lot better. And if you freeze it you don't really need to be super careful like when you make tomato preserve. The rice is also great. It is easily cooked in different ways (which completely change the taste of the rice itself, for example cooking a saffron risotto is different from egg fried rice) but it still takes little time to cook the rice and it can be done with many different ingredients. A really good alternative for people that cannot eat gluten. Also among the sweets there is an excellent dessert called ice cream (or gelato)... The most important thing is that it's easy to make at home too, without an ice cream maker, you just need a container, a whisk, a thermometer, the freezer, some egg yolks, sugar, milk and cream (+ whatever flavor you want to make... advice the mint one for the summer which is good, fresh and very easy since you use the mint syrup directly, for chocolate for example you will need to melt it before). Milk and cream are heated up to 85 degrees Celsius, while the yolks are mixed with the sugar with a whisk, the contents are poured at 85 degrees into the yolks/sugar container and continue to mix... Then add the mint syrup (or any flavour) and it is left to rest until it stops being hot. Then put it in the freezer, taking care to mix it every half hour for 6 hours... or in an ice cream maker for half an hour and you are done (I never said it was fast without ice cream maker XD). mint syrup 150g 3 yolks 125g sugar 150g cream 150g milk Also every now and then a good farinata is a good idea and easy to make too (1 part of chickpea flour, 3 parts of water, mix until there are no residues, remove the surface bubbles with a spoon, leave to rest for 5 hours (optional, it will taste better if you do) , mix 16g of oil for every 100g of chickpea flour and 3g of salt for every 100g of flour). Place in the lower part of the static oven for about 20 minutes, the last 10 of which in grill mode. Another quite simple recipe is piadina. Use only lard (or oil, but lard is better), flour, salt and water. It mixes into a ball. Leave to rest for at least 10 minutes, roll it out. If you can't roll it out, another 10 minutes of rest is enough... repeat the rests as you roll it out to widen it and make it as thin as you like. It cooks very quickly in a hot pan and can be made both sweet and savory (classic ham and cheese or, for the sweet version, just Nutella). 60g flour every piadina water it depends on what you want to achieve. If you like a chewier taste and flatbread that doesn't break like a tortilla, use hot water (even boiling) and 60% of the weight of the flour. If you like a more leafy taste (my favourite) use cold water from the fridge, 50% water if using olive oil as fat, 35% water compared to the weight of the flour if using lard. 1 tablespoon of olive oil or 20g of lard for every piadina. You can make lard from bacon cooking it at really low temperature for a lot of time. Collect the lard juice into a container and into the freezer or fridge (if you want it to use as soon as possible). If you make the bacon into small strips, while making the lard, these will start to color and, when they are almost completely colored (not afterwards because otherwise they will burn) therefore with some small parts still transparent/whitish, they can be set aside . The liquid that remains is lard, while the small strips which, squeezed with a potato masher and placed in a container in the fridge, will become crunchy and are delicious snacks, much better than potato chips. They can be eaten like this or they can be used to season pasta (amatriciana and carbonara for example). Making bread at home is also fun and easy and saves a lot of money. I follow chainbaker's recipes because they use simple yeast and no knead so they're very simple to follow (although I use fresh yeast instead of dry). To make pasta at home you don't save much but it's easy and fun and I recommend pasta grammar. And I also love making pizza. For the pizza I recommend the pinsa bases... Pinsa no stress is the recipe I followed (it's in Italian and uses a special oven but if you're interested I'll write the recipe below, you don't really need a special oven for Pinsa). Basically, the excellent idea of the pinsa is that many bases are made, cooked without any sauce, frozen. When you want pizza, you take 1 frozen base from the freezer, season it and cook it without waiting for it to defrost (there's no need in a hot oven... also because it's pre-cooked anyway). Great for storing lots of bases without making a mess in the freezer and for using other fresh ingredients on the spot. After all, a simple tomato puree is enough (you put it raw, it cooks in the oven with the pizza so it's super convenient) and mozzarella. In 5 minutes at that point the pizza is cooked in the already hot oven. La Pinsa is a modern pizza (born in 2001)... it uses a mix of white flour, rice flour and soy flour... but the method is also perfect for classic pizza at home. And when you have pasta, rice, bread, pizza, ice cream... you just need to know a few meat/fish recipes and get discounted fresh seasonal fruit and vegetables and you're fine. Basically easy recipes like boiling pasta should be made fresh, complex recipes should be made in large quantities and frozen in small portion that you can easily access when you are tired (usually you don't even need to defrost them, but if you need to just remember to put it into the fridge 1 day before use). That's the main secret to always cook great things at home. And have fun too.

One suggestion. Kids eat everything if they get to cook themselves (I was very picky when I was a kid and in a way I still am so I think I know how to get around that). The important thing is to present it as a game, make simple recipes (or if you have time, follow them so that they can have fun like kneading dough for home made bread or pasta) and let them decide what to do or suggest something that they like more or less so that they really want to "play" (you can put an ingredient in them that they normally don't like, for example if they don't like onion, you can tell them that onion usually goes in for that recipe.. . they can be persuaded to use it by saying that in this way everyone will compliment them... maybe you will say something like "I know that you don't like it so let's use a little less so that you will not even notice it but everyone will still be happy and say this is really really good").. If they are not too young, even cooking a simple tomato sauce or risotto with a sauté is not a bad idea, very easy to do, it teaches them something in life that will come in handy and they can also have fun doing it. It is very important to compliment them so that they are led to repeat the experiment. The more they enjoy themselves the less picky they will be about food. Get ready because they will definitely get a lot dirty and you need to be patient but it should be a fun activity for parents as well. As a child I was able to have fun thanks to my mother and when she made me cook I also ate things that I normally didn't touch. To date, in fact, my being picky has changed a bit, in the sense that today, more than anything else, I cook well enough that it's difficult to find a restaurant that I like🤣. Among other things, sometimes my father involved me so much with the game that even washing the dishes became fun (I still have a picture from that era and it's really nice) so you don't need to invent some complicated dish, as long as it's a fun game and the children should follow you. Among other things, it's the same tactic I used when I was a swimming instructor for the children, I made them play and they had fun and they forgot their fear of water (now I'm a web developer so I've completely changed field).
