Like you said, I love entering competitions for the feedback and improvement notes. I think its important that when entering a comp., its understood every person has a different palette and way of considering things (judges included). Don't take negative notes to heart, but look at them as an opportunity to improve. Cheers and CONGRATS on the medal!

You also have to consider those bottle conditioned beers stored at higher temps in transit possibly had a bit of secondary fermentation happening. Changing the profile of the beer slightly. Not the case for your dry Irish stout

Congrats on the medal. I’m impressed that you were able to enter that many beers. I took part in the 2021 competition. That year, if my memory serves, the beers had to arrive at the location on a specific date and, if your beer made it to the last round, it could be almost 2 months later before they were judges for the last time. That could easily be the difference between good and bad beers for certain categories. Your outlook is good. Take the comments and use what seems like it is helpful and discard the rest. For example, it sounded like 2 times the same judge said your beers were both over and under carb’d.

Congrats on the medal! And sooooo good to get some of this super valuable feedback 🙂.When it comes to bottle conditioning (which I do ALOT of) its my personal opinion that simpler is better. There is enough suspended yeast in these beers to carbonate without adding any extra yeast. I've also found using simple table sugar the best for carbonating evenly and without affecting flavor. The more I have tried to move from this simple combo in the past, the more I have found flavor/oxidization issues in my beer 🤷♂.

The feedback is fantastic. The thing with adding fresh bottling yeast is that with these beers, they are all quite high ABV and the initial pitch of yeast has gone through a lot in getting them up to that point. Adding fresh yeast in my mind minimized the risk off flavors, but who knows!

Very interesting. I was thinking about looking into some competitions in the future, didnt think about it as a way to help myself grow. I did recently learn that there is a local group near me that does some monthly "completions" with in the group and some are professional judges. This might be a way to get critical feed back to help myself grow. Great video thanks for sharing your experiences with us.

Bulk prime, it's the secret to avoid all bottle variance. Means you get just one extra vessel for bottling, but it saves time and increases consistency, and you can bottle different size bottles without hassle. Also helps with not bottling the bottom yeast cake. Just bulk prime, once you do it it's like a revelation that makes you wonder why you bothered with priming each bottle before. Grats on the medal though. Been watching your channel and learning a lot. About carbonation, it might be good to find out at which temperature judges open your bottles as carbonation varies a lot depending on temperature.

As a Belgian, I can tell you congrats, congrats and congrats again. I know this competition is about matching a style, but remember that unlike the British or Germans, we don't like to categorize our beers. They are all different, even sometimes within a same batch (that's why our monks bottle condition). Each bottle is an art, not a standard. I can see how tasty your beer is just by watching your last videos. Competitions are good to make an idea of progress, and hell yeah you did pretty well. But don't feel the need to standardize yourself. In the end of the day, competitions are based on the Belgian beers, not the other way around. Santé!

All beer judges are full of bunk. I entered a cider very early in my homebrewing (now a professional brewer) and I got a sheet back from a certified ranked BJCP judge that said it was...wait for it...."Too Apple-y". The next competition I entered a 2 year old imperial stout that scored a 49 out of 50 (the highest at the table) and it did not take a medal....its not worth your money.

Entered a Belgian dark strong that made it to the third round. One judge said “Good beer, keep brewing.” I also did not bottle condition that beer, but rather used a counter pressure filler from the tap. I was worried about the high temps of shipping and roughness of handling. That definitely could’ve effected the character of some of those Belgians. Also, Entering one beer ended up costing $75 with shipping. So yeah, I get the expense involved.

Regarding the oxidation character: since it was reported several times I would assume that there is actually a small problem. I would assume it is in your bottling process. Perhaps you can make a video about it for us to criticize :-)

I think I'll keep doing stuff like this for sure. I think the oxidation issue is most likely in the bottle conditioning process. Next year I will submit with a counterpressure bottle filler and we will see if those comments go away!

Packaging is one of those things that can expose flaws not evident from a kegged beer kept cold and served onsite. Macros go through a lot of steps from start to finish to preserve and transmit those delicate flavors in bottles and cans. Congrats on the podium!

If your beer goes through 4 rounds of judging how many bottles of beer do you have to submit? Also curious when you add the CBC-1 yeast do you add it to each individual bottle or as I do an amount to the bottling bucket. My results are some inconsistencies in bottle carbonation. Also CBC-1 yeast will “cake” on the bottom of bottle. If the bottle is disturbed and not properly poured you’ll get a cloudy beer in the glass. I imagine during transport, judging process, this could be a problem. Finally, judging is subjective and after sampling numerous beers the palate becomes stale. Congratulations on your award winning beer. Thanks for this informative video.

You have to submit 6 bottles per entry. I added the CBC-1 with a measured dose from a dropper. There's definitely something to be said about palate fatigue, especially on that first round!

I would use white sugar for bottling and cbc-1 is great, but i wouldnt dilute it. May take some more time to activate but results are solid at 10-14 days. Carbonation drops are also a good quick hack, on belgians just double or triple the drops :). You were shooting for 3.0, but ive seen some belgians play very well at 3.5, it may actually help you on some of the other scores, some of the critiques could be direct results of not enough carbonation, carbonation increases tartness and effects overall experience!

Nearly all of the people I've talked to that are medal winners do not bottle condition their beers - there's way too much that can go wrong with the process. To some extent they do the following process: 1. Purge bottles with CO2 2. Counter pressure fill from the bottom 3. As you pull the bottle filler out, fill the headspace with beer/foam 4. ALWAYS cap on foam I've been doing the above process for my competitions and have had great results and a few medals at the regional level.

Thats what I did for the Irish Stout - but I would be worried about getting the required carbonation level in the bottles that way. Still, definitely makes it far less likely that oxidation will occur.

@@TheApartmentBrewer I use a Tapcooler with the valve keg connection kit, which in my opinion is by far the best counter pressure bottle filler. I typically pressurize all my kegs to around 10-12 PSI depending on the style. The key with the Tapcooler (and probably any counter pressure filler) is to set the purge pressure of your filler 1 PSI lower than what you have it set at inside the keg. This will prevent CO2 from coming out of solution when you break the seal and pull the filler out, and keep your carbonation level where it was inside the keg. I've been doing it like this for a while and I've got beers on the shelf that are 6+ months old with carbonation levels around where they were when I first bottled them.

Just a suggestion for what it's worth. Just my opinion. Stick with using the same base malt to use the with your Belgians. Don't use different maltsters on every batch. You'll be able to zero in on those specific characteristics of it rather than a mix and match approach as you make the same recipe over and over. One other point. Use dextrose to help dry out the Belgians. It will help break down not only the longer chain sugars in the syrup but the simple ones as well. A mix of syrup and dextrose is a good combo.

I do understand the desire to enter comps and I know guys who enter them frequently and they generally get generic and often inconsistent feedback that I don't find particularly useful so I will continue to pass on them. If I could be present for the judging and hear them talk through the judging process that would be way more useful feedback imo. I think I would be pissed if I spent a bunch of money entering a competition and that was the type of feedback that I got from it.

Apologies if a repeat comment but next time it sounds like you need to bottle in pairs, send one half of the pair off to the NHC and keep the other one (poorly, at room temps). Then when you receive your results, open the second half and see if you can 'see' what the judges are detecting.

Beer is a fairly subjective thing in my opinion especially when it comes to taste and what the individual prefers, someone may prefer the taste of a beer that is considered "incorrect" over a beer that is considered "correct". I do though 100% understand that these sort of competitions are aimed at brewing traditionally correct beer. Good job with those Belgians and congrats on the award winning Stout!

For my Belgium strong I start fermentation at 62 and bring it up slowly over 7 days to 82 then flash chill(I use a modified mini-fridge). But as others have said the bottle conditioning and maybe high shipping temps and agitation(i.e. headroom/oxygen in the bottle) may be bigger factors. I guess you'll just have to make more beer to find out ;-)

I have a suggestion. I think next time you do this, you should bottle one beer of each for yourself so that when you review the judges sheets, you can taste what they tasted as your reviewing the sheets. I think maybe this would help.

I didn't add any nitro at all. I used a beer gun to bottle the stout so it didn't flow through the stout faucet, thats more of a drinking experience thing.

A lot of times with the beers by the time the judges get to it, the beer is warmer, not serving temperature. So any faults in the beer really show up. A good way to taste what your beer would be like in a competition is to let it warm up and drink it.

Yeah, don't take these comments to heart. Submitting your beers with a vision to improving them is the worst thing you can do, just ask any experienced competitor. NHC is even worse than normal for that, given that they're deliverately not feedback oriented and they take whatever judges they can get to volunteer. If you're dead set on this path, submit your beers to something like the Lone Star Circuit. There are lots of competitive homebrewers in Texas and the circuit has been operating continuously for something like 20 years. You'll receive tons of good feedback from the very experienced judges.

Did you use glass bottles and a metal cap? I've seen people use PET bottles, less chance of a capping issue, lighter to ship and won't break.

Used to enter competitions and win medals. Judges are a crap shoot for the most part. There are way too many factors and getting good judges is luck mostly. As a judge who has seen the other judges sitting at the table with me, I can tell you that often judges suffer from palate fatigue, being hungover from the night before, etc. etc. I only enter local competitions now where I don't have to ship my beer and can drop it off in person.

Just goes to show its all subjective. Amazing how inconsistent each judge is. I'm sure you're thoroughly confused. I've entered a few contest. And same results. One judges wife pissed in his cheerios, bad score, one got laid, good score. You did fine Steve.

You have to be biased towards your own beers, because you brew the beers for yourself!

You need to bottle condition, dude. All of the big Belgian breweries do it for a reason. Pump up those esters and yeast character.

@@JohnL9013 No worries. The Belgians were all bottle conditioned. The Irish Stout I medaled with was packaged with a beer gun

Good job man! I had an Irish stout go to the mini Best of Show in the blue bonnet brew off in TX. I didn't place but at least it passed through the first flight.

I started to look for feedback on by beers by submitting to the NHC as well. I got the same bag of mixed feedback and overall lack of detail on my scoresheets. However, last year I took a BJCP judge training course from a member of my homebrew club, who is a grand master now, and that was a lot more helpful. I can only guess that the NCH scoresheets are stripped down versions of real BJCP score sheets because of the number of submissions they receive. Since I took the class I have judged in a number of competitions and been judged in competitions as well. I think the feedback you get from smaller local competitions is a lot better. The judges tend to be less rushed and do a better job of filling out actual BJCB scoresheets with scores. If you can take a BJCP training class. Thats the scoresheet I thought I was going to receive. But I do see your point on the smaller comps having more time for the judges to spend with the beer. Makes a lot of sense!
