In mid to late June, it’s time to start seeing How far along your garlic has developed. For hard neck varieties, as soon as you see the escape emerge from the neck of the plant and make a curly cue, it’s time to snap them off and enjoy this extra treat! Typically scapes happen around 2 to 3 weeks before bulb maturity. 
Typically, many soft neck varieties will mature before their hard neck counterparts. A good way to know whether they are getting close to being ready or not is just to look at the leaves. When 1/3 to 1/2 of the leaves look like they are dead or dying, it’s a good idea to check on the bulb formation below. If you see a well fattened bulb, with distinct clothes visible, it’s time to start cutting back the water and letting them cure underground. In our area, based on average seasonal temperatures, it’s somewhere in the first two weeks of July that most of our garlic will be ready to pull out of the ground. If possible, cut water to them now if the bulbs are looking well formed, so they will take less time to cure once you harvest them. Check out our garlic braiding video for soft neck varieties!
