We use CO2 for two different reasons when using a temporary draft system, like a jockey box or jumper box.
One is to move the beverage from our keg, through the jockey box coils, to our beer faucet (or tap). With a 50' coil, we need to overcome all of the resistance that coils creates, so our regulator pressure needs to be at 25-30 PSI. This is a temporary draft system. Not a balanced kegerator or professional draft system installed into a bar or brewery. So the PSI needs to be higher than normal. Normal operation in a balanced system is 10-12 PSI.
The other way we can use CO2 is to carbonate beverages. Using the high pressure, we can let our beverage sit 24-48 hours, and the beverage will absorb the CO2 and become carbonated. We won't have precise control of the levels, but we can make our own sparkling drinks.
