I'm italian, i don't put boiling water unless i want to give my grandma a heart attack, and i don't ''press'' the coffee (you do that with expresso machine because the procedure it's faster) neither i add water on the coffee powder. You don't put 200ml of water, according to the size of your moka pot, you fill water up to half of the tiny round valve you see inside. Hope this helps

I used to live in Italy. Italians typically keep things simple thus you wouldn't weigh the coffee or pre-heat the water. I'm not saying your coffee is bad by any means, I just believe this technique is better. James Hoffman made a detailed video about this, I would encourage you to watch it. Pre-heating the water makes for a faster brew and helps ensure your coffee isn't overheated. Weighing out the water and coffee also isn't necessary, but it helps ensure that your coffee is consistent each and every time. The only thing I'd change is you really don't need to tamp at all. I just tap on the counter to level out and compact the grounds.

@@daulahiftitah6461 the Rok and the flair are both manual espresso machines. The count as espresso because of the amount of pressure being generated and the amount of coffee you get. Moka pot doesn't count as espresso because it can't reach the pressure for espresso. But don't get me wrong moka pot is still good if that's all you have. Also there are small automatic espresso machines for home use like the rancilio silvia or the Gaggia classic that get you real espresso.

Well I'm not Italian, but we use those for generations and I can say that it's not astrophysics. I've tried both ways, to put cold water and wait for it to naturally heat and with warm water to make the process faster, it's absolutely the same. The only important thing about this is what kind of coffee will you put in it and how fine is grinded. If the coffee is baked not more than month ago it would be good. Otherwise, it doesn't taste the same.

I’m Hispanic so this is the only way I knew how to make coffee my entire life. I didn’t learn a “normal” coffee maker until a few years ago in my mid-20s. Coffee comes out 100x better in this thing. None of the measuring. Whoever was up first (either Abuela or Mama) filled the big one up with water and then packed the middle tight with Cafe Bustello. Set on medium heat and everyone comes and pours themselves a mug with a side of buttered toast. Cafe on the stove, sugar in the cup, whole milk on the ready. Cafe con leche.

If you are not a coffee person you probably like coffee with some milk in it. I've tried many Moka's, and no one made a coffee that is comparable to a good machine, even cheapest ones. You can give it a try tho, since is so cheap you can literally make a 100 coffee with probably just 10$. For my taste, the result has too much water, the taste is washed out and also burned. But, hey, taste is different :/

Just one thing, be careful with grinding it too fine and "tamping" it, they're made of thin aluminum and too much pressure could end up in the pot exploding. (Or more realistically the pressure valve venting and you having a heart attack because of the noise lol) Speaking of the pressure valve, contrary to what many Italian people will tell you (it's about a 50/50 where I live lol) fill it BELOW the pressure valve. If it has to go off, you'd much rather having hot steam thrown at you than boiling water. And if you don't want anything venting at you, point it at the wall when you're brewing!

I am a certified Italian so here is how we actually do it. Fill the bottom with (not boiling) water until the little valve on the side, then put the espresso powder in the filter (do not pour water on it and do not press it down), then screw back on the top and put it on the stove. Make sure to never clean the moka with soap. My go to espresso mix is tazza d'oro since that is what we grew up with. enjoy

Hot water in the bottom, combined with avoiding sputtering and taking it off high heat when the extraction starts makes for far better coffee, unless you like it bitter and burnt tasting. I disappointingly had plenty of crap tasting coffee in Italy.

still using mokapot to this day, its freakin cheap, practically indestructible and doesnt need any special maintenance. the perfect way to did this is, first grind your coffee to medium fine, on a scale 1-10 lets say 2,5. remember to always use a fresh roasted coffee. put the ground coffee on the basket and dont tamper it! you can spread evenly by using spoon handle put a pre-heated water on the water chamber until just a bit below the pressure valve, and this is the hack, take a paper filter from aeropress with a diameter exactly like a diameter of your mokapot coffee basket and put it on top of coffee ground. on the stove, use the heat as low as possible and wait for couple minutes. after seconds the espresso start flowing you will hear the gurgling, turn down the stove immediately and take out your mokapot if your espresso is not flowing smoothly and no foam whatsoever then you did it wrong, it will only make your coffee taste more bitter

Some of the best coffee I've ever had was from a Moka pot. Year ago before I was really into coffee, me and my parents helped a friend of the family's elderly parents move some furniture into their house. They tried paying us for it but we did it as a favour of course and wouldn't accept any money. They were Italian and didn't speak much English, they were very grateful and very sweet about what we did. They insisted before we left that if we didn't take any money that we must stay for some "proper Italian coffee" they had some good quality beans that they'd brought over from Italy and they served us the coffee. It was truly incredible, so delicious and smooth, I've never been able to recreate anything close myself since. They know their stuff those Italians!

Great method, pretty much my favorite way to brew, one little thing I do different is immediately putting the bottom under a cold tap, when the bubbling starts. The difference is small, but it helps omit the last few drops of overextracted coffee, and prevents overheating of the brewed coffee a bit ^^

Where I’m from we don’t call this a moka pot but a “Bialetti” after the guy that invented it. There’s also a legend, that when he died instead of a normal urn he had one made that looked like one of his famous pots since that was his big invention

The other, previous, Italian coffee shop is called napoletana but was invented much earlier by a french inventor and does not use the boiler system and pressure steam like the moka but only the gravity fall. The origin of the name of the device lies in the name of the port city of Mokha, in Yemen, from where ships loaded with coffee left for the West.

DO NOT FILL ABOVE THE VALVE AS THIS COULD CAUSE THE MOKA POT TO EXPLODE (The valve is a pressure relief valve as there was a small problem when the moka pot was first invented as pressure liked to build up and cause them to rupture)

In Italy we don't put water on top of the powder, we just press it evenly and a thing to be careful about is to clean very well the screw they connect the two halves, any powder residue will burn and give your coffee a bad aftertaste

Pour boiling water into that bottom chamber and you won’t be able to screw them together, as it’s thin aluminum and heats up within seconds. You’ll end up with water leaking in your threads too.

Im a dog so basically the right way is to first beat yourself with the moka pot with 20 grams of pressure. Put your face on the stove top. once ur face makes a hissing sound it prepared and put it down. Dont heat the water . force the coffee and it takes better says my Grandma from Italy, Hispanic and Cuban.

The pre infusion is overkill imo. I like to balance the basket in a shotglass to add the grounds in a less risky way. Maybe do it on top of a small plate to reduce the mess, 9 out of 10 times you'll spill grounds. And as much as it kills coffee nerds, moka pots need grounds amounts by volume. Enough to fill up the basket without compressing them, which if you want to convert to weight will require trial and error with your choice of bean and grind size

Moka pots are volumetric. You can't use a one size fits all weight for the dose. There's a lot of debate over temp to start with but fresh off the boil is certainly consistent and fast, it's what I do anyway. You can achieve preinfusion by intentionally stalling the brew :) Also don't tamp or if you do extremely softly, not to compact the puck. As above it's a volumetric full not a weight based on. The pressure of the brew will do this as the pressure builds, you'll get more issues than not if you over tamp for very little to no benefit. Keeping the heat on the lower side will also help keep your extraction up by slowing the brew. Hope this helps!

Interesting idea with the pre-infusion. Typically with actual espresso that’s done to better maximize the pressure profiles, but I’m curious to try that here! Good job on the boiling water, though that is primarily so that the actual coffee grounds don’t get burned by the heat of the stove during the time it would take cold water to come up to temp.

no probably you are using it the right way as this isn't that... always use cold water, never press coffee by hand, don't ever add water in the coffee, never wash with soap.

@@adrock889 if you use hot water the steam makes the coffee power wet before it's the right moment, as result the coffee will be lighter, also the color will show differently and from a wonderful gold, fluffy cream, you get a white/brown thin layer of "cream" which disappear immediately.... a much better trick with this machine is to take out the first coffee drops coming out and mixes strongly with some sugar to make a little slime, then add a spoon of it to the cup before spilling over some brewed coffee to make "espresso like" cream and giving the right amount of sweet if you like it with sugar.

@@Mau_DelS Nope you are wrong, putting in cold water means the coffee is sitting there on the stove forever gettin nice and burned and bitter. Putting in warm water speeds up the time til the actual extraction starts creating a smoother tasting brew. You are just wrong with the whole crema none sense

You don't have to measure. Just fill the water to the pressure valve, fill the top part with coffe and put it on the stove on medium to high temperature.

Putting boiling water in the bottom isn't changing the extraction time. The extraction starts when the water in the bottom chamber is boiling. If you put cold water in, it will take a long time from when you put it on the stove until the water is boiling. If you put room temperature water it will take less time. If you put boiling water it will take almost no time. Once the water is boiling it will begin to build pressure and extract. As normal. Regardless of what temperature the water was when it first entered the pot. There will be a difference, which is how much the grounds have been heated by conduction through the aluminium as the water heats. They will be heated a lot more if you use colder water. I haven't heard evidence either way, but I'd imagine it's better to not bake your coffee grounds before extracting them.

Edward, I'm a chemist... And to everyone that know basic thermodynamics/chemistry that's some clear bulls***... If water is boiling, it doesn't mean the temperature can't get over 100° celsius degree... Higher temperature may lead to the extraction of bitter compounds and burn others. Nonetheless, coffee must be heated homogeneously to get a good extraction and to not burn, and you can get that by having a slow raise in the temperature (basic thermodynamics)... So, yeah, all of what is in your post doesn't have much sense to someone how knows what they're talking about, sorry :) Putting boiling water it's not only useless, but stupid just as to wet the coffee before... General advice to the readers: know nothing about the topic? Don't talk! :)

@@marcofrassica9031 you're a shit fucking chemist then. unless the water is pressurized, it won't be reaching past 100C. That's why pressure cookers exist. Simple VLE concept with simple phase change (aka SIMPLE THERMODYNAMICS). cold or hot water in the chamber, theyre both going to be pressurized and go past 100C, one just has an easier fucking time getting there in the pot. it's shocking the difference between a chemist and a chemical engineer, jesus. stick to synthesis and mechanisms dude. extraction doesn't happen until water meets grounds either, simple mass transfer concept btw.

I’m not Italian and even I know not to use boiling water or press the grounds down. I do, however, add either crushed star anise OR lavender buds to the grounds when I’m feeling fancy.

you are arrogant, ignorant and embarassingly wrong. using boiling water is fine. As soon as your "boiling water" leaves the boiler/pot, it will be at a perfectly fine temperature. It will not be literally boiling inside the moka pot. And he doesn't PRESS the coffee. He just flattens it. Really nothing special.

The water will heat up to about the temperature either way. Starting with hot water just makes the process faster.

You can also use the moka pot to make delicious "café cubano": Add two tea spoons of sugar to your cup. Once the first concentrated drops come out the moka, pour a little on the sugar and stir well until a paste is formed. Brew the rest of the coffee and serve. Enjoy!

It all depends on size of the moka pot and brand, but they range from 10-50$. Mine was 20$ for an aluminum, 3-cup, moka pot.

I mean, I think most of this is purely ritual, like most things coffe enthusiast do, so it doesn't bother me. What bothers me is putting already boiling water in the chamber, plese exaplain why you would do that. It doesn't give you shorter brew times, it just means the water it's already hot and doesn't need to reach boiling temperature in the moka, you are not saving time, you simply spent that somewhere else.

Boiling water helps with flavour (reduces bitternesss common with moka), pre-infusing is something you can do on professional machines too, he is also correct to tap instead of tamp the coffee for a moka pot (on a machine you tamp because the pressure is higher). Pro Italian baristas would agree too, just cause you come from Italy doesn't mean you automatically know.
