Mooncakes are a staple of the Mid-Autumn Festival, the second biggest Chinese holiday of the year. The traditional Cantonese cuisine treats, which date back centuries, are made with fillings such as mixed nuts, ham or lotus seed paste and salted duck egg yolks. In recent years, bakers have started experimenting with new mooncake fillings like ice cream and custard. One family-run Hong Kong bakery has been overwhelmed with customers who queue for hours ever since they introduced pistachio-flavoured mooncakes. Other bakery owners in the city say they are still hooked on the timeless salty and sweet flavour combination of traditional mooncakes.
