I think I've only had a calzone once in my 65 + years. I found it dry and doughy. Yours looks much better. I might try that with mortadella or prosciutto and arugula, and whatever else floats my boat at the time.

Yeah and so many pizza chefs need to learn to let it go low and slow and if needed leave it on the edge of the oven to cook the ingredients through. had one recently everything was raw and cold in the middle nearly spewed everywhere

Yes. It is very hard to get out of the tray without using flour. It will stick to the tray and stretch and deform the ball making it almost unusable.

never liked calzones as much as pizza but I suspect I could with a pizza topping on the outside and let it cool inside, cheese just isn't as tasty when molten

problem is with that metal scraper and the plastic box youre going to be creating nano/micro plastics all over the dough

Pretty much the same as every single pizza place out there. Likely 95% of restaurants use colour coded plastic cutting boards too. I always use a certain side of the scraper which actually is more curved to avoid actually scraping the bottom of the tray. The semolina also acts as a barrier.
