Hi there. Love your videos. I believe you make the most profound knife-sharpening content. I've got a question, though. Will this setup (the diamond stone) work with cheap kitchen knives? Could you do a video on just strops? Specifically, I am wondering how to remove some cheap compound I put on mine. I want to replace the cheap stuff with diamond stuff as you recommend. I am a woodworker by trade and I have to sharpen all of my edge tools on a regular basis. This is an excellent introduction to sharpening and something i wish someone had shown me this when I first started. It is really important to understand the mechanics of what is actually going on at the edge of your blade.

Great video! You were so inspirational that I started sharpening knives when I saw yours videos. I have a question about big knives (something like butcher knives), ho can you maintain the angle of sharpening? Larger knives are just harder to sharpen. You can still lock you just may meed to allow for more body movement if that makes sense 🙂

I got a DMT fine stone on your recommendation a couple years ago. I can get knives okay sharp, but not mega sharp and especially hard on filet knives. Would love to see a video on typical flexible filet knives if you get the chance. Thanks and glad to see you back in the knife world

It may be the steel. Not sure what you are using but Filet knives are generally stainless. There nothing harder to sharpen than cheap, poorly heat treated stainless. It just doesn't take an edge well due to many different factors.

@@OUTDOORS55 I have a victorinox and a bubbablade I use most often. I have a gerber as well, but assumed it was cheap steel. The victorinox is probably just a flexible boning knife in a sheath.

I use old knives and a newer Victorinox but I never go mega sharp, or sharpen more than a minute. Knives just have to be in a predictably safe sharp enough state

Excellent video, advice, and camera work! Sharpening is a sad mixture of tradition, dogma, and voodoo. All you need to keep good knives razor-sharp is 1200 grit diamond bench stone (or even an Arkansas stone) and a hard leather strop loaded with 1U diamond. Please do try very hard , smooth rawhide on 1 of your strop blocks. You have to crosshatch the rawhide with tiny knife slits to permanently retain the diamond paste. The advantage is, it works more like a 1U stone than a strop, and your blade can't be over-stropped.

Hey there, is there actually a big difference between only pushing the knife into the stone VS only pulling it VS doing both at the same time? Some people claim there is only ONE way to do it right. And for me it seems that my knifes get sharper if I only push them into the stone. And I don’t know why.

Funny, I just refined three of my Spydercos the day before you posted, using the same stone and a DIY strop… It’s really the best “minimalistic “ setup for an excellent edge. Stone bought and strop made mostly based on your older videos. Will support and buy a strop and compound from your shop soon, it’s a bit expensive with shipping to EU for just one strop though.

I've learned to sharpen from your videos few years ago, so this vid is kind of a nostalgic throwback ) I actually figured out that trick with removing the burr using a piece of wood on my own, because I got pretty good understanding of physics of the process from your videos and thought "hey, this might work!"

I learned a lot from your videos months ago so first I would like to say thanks. It's always nice to watch your videos. I did a lot of research after that and maybe you would find this interesting. This double bevel is a nice technique for chef knives. Instead of sharpening with 15° you can sharpen with 10° and use a microbevel with 15°. It gets a lot sharper without compromising edge stability. Low grit stones leave scratch marks on the edge and it creates microsserrations effect. Each material responds different. For cutting paper and hair high grit stones work great. For cutting vegetables the microsserrations help and a lower grit (1-6k) gives a better edge than high polish. Microsserations is not a huge effect but it's noticible. For cutting rope some people like very low grit like 320. I only use kitchen knives so I don't know how to optimize outdoor knives.

Thanks for the vid 👍 Question on the strop - is there one side of the leather that is better to use? And what makes the leather good for stropping? I have been using the rough side for my coarser compound and the smooth side for the finer compound, not sure if that is an appropriate method but it seems to work ok. Also, what is the diamond paste you recommend? Thanks!

Its completely dependent on the leather itself. Some leather is incredibly rough on the rough side. I use the "rough" side for my strops but its very soft feeling. I find the smooth side doesn't hold compound well. But again its leather dependent. Im using knife point gear 3 micron paste. 🙂

I like this simple approach. Fact is, most of us (I am guilty) have way too much time and money chasing sharpening perfection via an awesome selection of gear. Many folks have sharpened well with one stone and maybe some stropping. I'm not trying to say everyone should do this and that, as if it mattered, but simple is cool!

Hi Alex, thanks for all your great content! Because of your videos I’m finally learning how to sharpen knives at 40 years old. I typically carry a Spyderco Delica 4 FFG. I’ve been using a smith’s guided system with the clamp, but I’m starting to do more free hand now. I also have a beaver craft strop with the green compound. I just made a new strop as I want to try Diamond compound. But you are out of stock of the 3 micron on your website. I will buy the dmt stone soon, but currently have the harbor freight 4 sided Diamond block, and a cheap stone. Anyway thank you for your content and do you think I should get the 4 micron that you have in stock ? Or wait for the 3 micron ? Thanks again

I use the same DMT, but two of them: extra-Fine and Extra-Coarse. Extra coarse is stroked parallel to the edge, the extra-fine perpendicular to the edge, at a higher angle initially to wear off the wire edge. Extra coarse is at about 10 dps, the extra fine at 15 dps. That's it: From choppers to slip joints, all use the same method/angles. The most originality I claim is the near fully lengthwise stroke, which keeps the main bevel angle very consistent.

Hi. You push into the stone while I do the opposite. What is the advantage of doing like you, please? I use two knives for my kitchen. One in VG10 the other in ZDP189. Is there a method for "soft" steels like VG10 and hard ones like ZDP189?

Glad to see you around again :) Regarding the sharpening I have always had one question. What do you look out for in order to maintain the same angle while deburring with one hand? I can get it done by switching hands an tilting the knife until the apex touches the strop every time. But you seem to just switch sides with one hand and hit the perfect angle automatically. I can't speak for him, but personally, and most others I've talked to, it just happens automatically, with experience. I just say get familiar with holding, using, and sharpening your knife, makes it more comfortable and easier to do.

Love the Spydie!! My favorite folders in the world. Not to knock your video or skill (you’re obviously very good at sharpening) but I’ve found through my many years of being a knife and knife sharpening enthusiast that Spydercos are some of the easiest knives to get scary sharp. Hell they come that way from the factory! lol Plus I noticed that one was a Japanese model so it was almost causing VG10 which is an incredible low-mid end super steel. Great video though

you dont have to, water or diamond stone lube mostly help carry the swarf away so it can help on softer steel or re profiling

I dont use water on dmt stones. They use a carbon steel base and will rust. I use them dry all the time and just wipe them off if needed with a dry towel🙂

You want something very firm but soft. You dont want rough. If the leather feels scratchy its not good. But it also need to be very firm to keep from rounding the apex 🙂

Not the grooved carbon steel types but the diamond impregnated (say 1000 grit) and ceramic rod (3000 grit) types. What do you recommend for fixing a really bad edge, or reprofiling a blade (say form a broken tip)? And do you recommend getting the fine stone only, or the fine/coarse or fine/ extra fine? Does the plain fine stone have diamonds on both sides, or just one? And do you have any experience with the Trend stones? Do they work as well as the dmt ones?

Meanwhile, I'm trying to prepare a good strop. A couple of the leather workers I follow said to strop on the grain side. I see you leave the flesh side up. I’m going on 70 years old. My Grandfather taught me how to sharpen on an old Arkansas medium grit stone. That old medium grit stone left a very bitey edge.
