I could never figure out how long it was possible to leave a bokashi bucket before it starts to spoil... I left mine in the kitchen for more than 8 months and it turned out fine and had a sweet smell of fermented food. I was surprised by how little the food changed in appearance. I never did locate the bones I was looking for but I'm sure they were still fully intact somewhere in there... I think the limiting factor is the Bokashi Bran. On the bag I have it says that it expires in about a year. And it would be hard to tell if your bran was actually bad or not. Overall I quite enjoyed the process of saving my food scraps and burying them in the back yard. (might be hard if you live in a city, but do-able) It feels good to keep unnecessary food waste out of the garbage stream. This seems like a good solution for food scraps when the ground is frozen through the winter.
