The problem I find is that many recipes use different methods of measuring, and do not always disclose what method they are using. Some will dip and scoop, and some will fluff up the flour and spoon it in the cup. And this often amounts to a big difference in how the recipe will turn out, especially with flour and things like brown sugar. It is one reason why professionals go with weight measurements. This is why weight recipes are more accurate than volume. I always appreciate any and all recipes where grams are used. If more of us Americans discovered the accuracy, consistency and speed of using a scale, they would convert immediately!

Darlene Rothenay well said! That’s why I also show how to measure if one chooses the volumetric system, but for example if the person sifted the flour before scooping it then the measurement would change massively

If you do not fluff your ingredients when said in end your recipe will be dense, maybe hard/though. The particles will be farther with more air in between. If you fluff/stir, your flour for example your end resulr is a more fluffy recipes. I mostly flufff/aeriate my flour, baking powder etc due to settling of the ingredients. That is the difference between fluffying or not. And it can even ruin your outcome if you do not do it.

*SOLUTION TO ALL BAKING* Check comments under recipes given in the *METRIC* measuring system. I.e. *Weights in grams (gm).* *Liquids in millilitres (ml).* You'll *N E V E R* find squabbles. A gram is *28th* of an ounce !!! I.e. an ounce divided *28 times!* In other words: It takes a whole *28gms* to make an ounce. *HOW CAN YOU GO WRONG !?!* The accuracy is *UNQUESTIONABLE!*

Thanks for the conversion. It's close enough. My grandmother used pinches, smidgen, her hands, and a tin cup. Her food was a sure great too! Trying to replicate her cooking is a challenge.

A high precision scale should be used for *everything.* no more need for measuring cups, and a scale is not only more precise, it's much faster too.

iam a Danish baker we use scale in grams, the volume is not good to get the perfect bread, fx 1 cup of siftet flour has a low weight the same cup whit flour from a bag has a higer weight so com on USA go metric its so more easy to bake

Really useful video. I watched many baking videos and jotted down the conversions as don't have scale. Dry ingredients we get in gms and liquid in ml.... too much confusing. But thanks to you for videos.... perfectly explained using scale and measuring tools 👍

I only wish that in recipes they would write down how many grams and cups you need. Not one or the other. I am European we don’t use measuring cups and when I saw a recipe with cups ... I was lost

Another resource for accurate measuring is on many packages themselves. Within the nutritional information on most packaging, the measurements are given in (g) for dry and (ml) for wet. Those should be the first resources used. For all others, stick to a general consensus (for example, not all flour types weigh equally). My favorite baker uses 130g for flour.

I grew up in non-english speaking metric system country and we don't have units like cups or tablespoons or other outdated and primitive nonsense. We measure everything in proper metric units defined by physical constants.

When I use a recipe book I first look to see where it was printed, U.S. cup differs from u k differs from Aus. Guess that's why metric is becoming the standard.

Please also remember that when you're measuring volumes, 1 US pint = 16 fluid oz, whereas 1 UK pint = 20 fluid oz. When I'm reading a recipe book that's written in imperial measurements, I often check where the recipe was published before I start measuring....sooo annoying.

Great video! That said, I don't understand why you did not level off the top when you measured out the granulated sugar. I level my measuring cup off and it does weigh 200 grams, which is the international standard weight given for a full, level cup of sugar. Right off the bat, it appeared that your scale was off or your measuring vessels were not accurate, because of how you demonstrated filling up the cups. Other than that minor nitpick, this was an excellent video and I thank you for taking the time to demonstrate how to convert measurements to weights.

Hello there, thanks for your comments let me try to add a few thoughts that came to mind :) I think you make a good point, to be consistent one should level off even coarser ingredients like sugar! Even without leveling it is clear that the weight measurement differs from cup to cup and that was the main point of the sugar part and why i picked the metal cup :) The numbers on the scale before putting the cups onto them were not random: step 1: weigh your cup, use the tare button to set things at zero I showed this at the beginning to avoid too much rep thanks for watching!

I followed a recipe that says 1 cup of flour(250ml it says, but on my scope also said 250ml). Then I use the kitchen scale, it was only 140g/ml. So which one should I follow? The 1 cup or add some more flour on the kitchen scale(I put it in a bowl)?

Hot Viral hello! One can measure out 1 cup of flour, cups are a measure of volume and so are millilitres. Now given the flour’s density then 1cup flour=250ml flour Maybe your scale can do that but if you want to use a weight measure (grams) then no worries, they are all equivalent: 1cup flour=250ml flour = 128g flour Hope it helps!

At this point I thing all these ridiculous measurements are used to keep recipes at least half secret. When a recipe is complicated any amount of vagueness in measurements will end up with COUNTLESS different results.
