My favorite way to make tofu is using extra firm cut into bite-sized pieces after pressing much of the water out. I then shake the pieces of tofu with a tablespoon of corn starch in a plastic container or storage bag. This makes for a crispier outside while leaving the interior soft. Heat some vegetable oil in a wok and start stir frying the tofu. Add whatever vegetables you like. (I love bean sprouts and slices water chestnuts. )Once the tofu pieces are crispy, pour in a sauce made as follows: a heaping tablespoon of Sriracha sauce, a teaspoon of toasted sesame oil, 2-3 tablespoons of soy sauce, and a splash of sake. Mix the sauce before adding to the tofu and vegetables. Cook long enough to thicken the sauce to your preference. Serve topped with small slices of green onion. Enjoy!
