Can you add a switch instead of the pull cord to the new light source that only controls the new light source and not the one you pulled power from?

if i was doing this, i would use a new work box because you have attic access. old work boxes are more costly, and less secure.

Will the pantry light work by pull chain if the kitchen light switch is off? I’m guessing no. And potentially it would not work if the bulbs in the kitchen light were burnt out. So this is not best practice. There must be a better way?

Correct, the light would not turn on if the switch that it’s wired to is off. A bulb burning out wouldn’t have any effect on the other lights. If you want the pantry light on and nothing else then you would want to wire it differently which would be much more complicated and costly as you may need a dedicated wire for that specific fixture. Doesn’t seem worth it to me but to each their own!
