I hadn't thought about "canning" to preserve bread before. Now I wonder how this might work with "quick bread" baking... I will try and report back Thank you for sharing this recipe:)

Works perfect for quick breads like banana,and zucchini. Use your favorite recipe, and do as she did here. I've had mine on the shelf for a year. We taste a jar per month until we figure out when it doesn't taste moist and fresh anymore. Still going good at the 1 year mark.

Hi again, just found your blog and 2 of my questions were answered, 3rd question can I substitute oatmeal instead of rye and spelt flour as it's hard to find here, Thank you again, oh one more question 🙏 is the bread still good to eat after the 6 months, Thank you so much for your time and concern may Our Lord bless you and keep you safe

Shouldn't be a problem, keep in mind that oat flour doesn't develop gluten though so your bread would be more compact, maybe raise the ratio of wheat flour a bit if you want similar results. As for the 6 months, it all depends on how sterilized and how well sealed everything is, but it should definitely be possible to make it last 6 months, especially with the amount of salt used.

Please don't put canning jars in the oven or microwave. Even the manufactures tell you the glass is NOT rated for that type of heat. They're only rated and tested for 'wet' heat, not dry. Even the nchf (national center for home food preservation) says its not safe.

you are the only person on bread canning to then water bath them, but I notice your water didn't cover the top of jars, also I couldn't find how much flour, also can you use oatmeal instead of rye and the other flour you used besides the wheat flour, I know lots of questions but I really do want to make this bread, Thank you so much for the recipe

Wondering if I can add even more figs & walnuts than the recipe says? I love a lot of 'stuff' in my breads, cookies etc. I've never heard of this long term canning of bread, thinking Christmas time would be good to send these to family members who live far away.

I lost track of her, she was an exchange student living with a German family in Chicago. She went back to Germany, it's a long story, anyway. I lost track of her. I don't know where to find her, or how. I am older too.

I will have to give this a try.. Can you use less salt? 1 tablespoon seems to me a lot of salt. I normally use 1 to 1.5 teaspoons in my breads. Thanks for all your recipes.. We made your Rouladen recipe Christmas Eve. So good!
