Here is a tutorial on how to bake light fruit cake that doesn’t require soaking of mixed fruit overnight.

Ps: I doubled the batch in the video. So the batch here is for an 7 inch pan.
Ingredients
Butter/ margarine 250g
Sugar 170g/ 250g (if you like it a bit sweeter)
Flour 300g
Baking powder 11/2tsp
Eggs 4
Vanilla 1tsp
Golden syrup 2tbsp
Black treacle 2tbsp
Browning 1tbsp
Mixed spice 1tsp
Cinnamon 1/2tsp
Orange juice 1/4cup
Mixed fruit 1cup/250ml and an extra 2tbsp for toppings
Cashew 1/4 cup
Almond 1/4 cup
Brandy 30ml (optional). You can drizzle on top of the cake after you bring it out of the oven. It acts as a preservative and also gives it a unique flavour.
METHOD:
- First, in a pot add 1cup of water, 1cup of raisins, 1tsp of cinnamon, 1/tsp of orange zest, 1/2tsp of flavour. Boil until all the water is gone by which time it would be thick and creamy. Allow to cool completely before adding it to the cake batter.
- Cream the butter and sugar until light and fluffy.
- Add the eggs and flavour and mix well
- Add the golden syrup, black treacle and browning mix very well.
- Mix the dry ingredients together and add to the bowl. Leave a little amount of flour.
- Add the mixed fruits and incorporate well.
- Then add the remaining flour to the batter and mix thoroughly.
- Pour into a pan and bake in a preheated oven until a skewer inserted comes out clean.
