Hey Patrik & April. I'd like to just thank you for all of you pioneering and hard work in this industry. For me at home, youtube has been my primary resource for coffee education, and you guys are on the top of my list. For several years I have struggled with filter coffee brewers and recipes, which have always felt extremely inconsistent. With April's reputation, I felt confident your new brewer was something worth investing in (and thank you for somehow keeping your international shipping rates so low, I am US based). I've now brewed over a hundred cups with your kit, at the 13g, 20g & 30g ratios, and I am quite simply getting the most consistently amazing coffee I've ever had. You have a lifelong customer! I just got my April brewer in the mail, and followed this tutorial for 300ml. I have to say, this is the BEST tasting pout over I have ever had. I dont think my grind setting was coarse enough because I had some choking at the end, but even with that my cup was SO sweet and silky, and the lid is such a joy. I cant believe Im drinking black coffee no cream or sugar! Thank you so much for showing me the way!

I have been using very similar recipe for 24g coffee to 400g water, basically, 4x100g pours. Interesting to see we both came up with almost the same recipe! I also find that with the last pour I pour a bit gentler not to disturb the coffee bed so much.

I recently purchased a sample pack of beans from you and they have all been incredible. I particularly loved the El Zacatin via the Chemex recipe on your site. I also purchased your April brewer along with the April filters. I’m having an issue with very long brew times and filter clogging and am hoping to get some feedback/advice. For example, I brewed the El Zacatin this morning (30g beans / 500ml water) according to this brew guide (30g circle pour / 70g center pour). This was ground slightly coarser than kosher salt (but I’ve also gone coarser all the way up to French press levels of coarse with the same results). There was no way to pour at the intervals suggested as the brewer wouldn’t drain fast enough (for example, at 1:05 my brewer would still be way too high to get in another 100ml of water). Additionally, once I finally get the total 500ml of water in, it takes upwards up nine minutes to finish brewing and the last 50-100g of water won’t come through the filter at all (even after lifting the filter up and setting it back down). Am I doing something wrong? Thank you!

In a more recent video demonstrating how center pour only, circular pour only, and combination of the two affects brew time and results in the cup a 50/50 split between circle and center pour is used as opposed to 30/70 in this video. I wonder if they now endorse 50/50 circle and center pour for their recipe? Anyhow, thank you for all the education!

Thank you for watching. A recipe is never a static thing. There is no "one way fits all." We aim to improve and be versatile with our brewing. A good brewer can change the pouring structure based on brewing coffee.

About how much is the slurry supposed to of drained before the next pours? I'm trying to dial it in and not sure how important it is to fully drain or 1/2 way. Also if you ground finer when using dark roasts, wouldn't that make it more bitter which they're sometimes prone to be? Thanks!

My draining times are faster than listed. I’m using a Comandante set the same way and the small batch ends shorter than 2:00. Using April Vulcan Azul too! Melina filters.

Not all Grinders are the same. Your grinder might be different from ours. So compensate and find the grind size that gives you the correct brew time.

@@coffeewithapril thanks for the reply. I just got a plastic brewer to help alleviate my gears of breaking my glass one with everyday use! Do you have any thoughts about the “high and dry” grounds? I always feel compelled to wash the side of the filter in my last circle pour to ensure all grounds are in the bed.

HI, no matter the grind size with my Kinu M47 grinder (started at 3.5 and went down to 2.5) the brew time for 13/200ml recipe is almost always 2 minutes not 2:45 as suggested. Coffee tastes great (tried Kenya filter roast from April and Ruanda home-roasted 1 minute into 1st crack), but I am curious what could be the reason and how to slow the draw-down.

Just for comparison, at 3.3 setting with V60 and 12g/200ml recipe (Scot Rao method) the total brew time is around 2:30.

The same thing here, I'm using a standard Comandante but even on 20 clicks which is substantially finer than recommended, I still get total brew time of 2 minutes.

@@dima-brew I am not sure how to "fix" it. I have tried pre-stirring the dry coffee before the first pour and it sometimes adds maybe 10-15 seconds. I have tried freezing the beens and grinding them frozen, which sometimes adds another 10 seconds with the same grind setting. But I am certain that it depends on the coffee as I managed to get to 2 min 45 seconds and even longer with coffees from Peru. I am struggling with Ethiopians and Kenyans.

Anyone having issues with grind size on comandante? Having to grind 13g at 16 clicks rather than around mid 20’s. They say the burrs shouldn’t wear down but mine has definitely worn down over the years

Mine is practically brand new (less than a year old) and I can't hit the targeted brew time unless I grind much much finer. I don't think it's the wear on the burr though. My suspicion is the combination of difference of beans and the paper filter used. I can't get April's paper filter and so I use Timemore B75 paper filter. It could be that my paper filter allows for faster flow rate.

@Coffee with April doing exactly what you re showing (whater slightly harder, coffee i would say medium light roast) but even with 23 clicks and the 200g/ 300g version i'm finished at 02:05 .... what do i do wrong?

Yeah i brewed a 500g and went quite fine and still 3:15. The Coffee bed was really muddy. Looking at the coffee beds in this video i ground way finer. Used the coco natural bolivian from coffee collectif

Hi! Thanks for these recipes for the wonderful April brewer. For the 30g/500ml, you can use the 155 Kalita wave filters or is recommended to use the 185 filters?

We always recommend using out own April Paper Filter but if you want to choose between the Kalita please use the 185.

Thanks for the great video. I was wondering about your TDS recommendation - 45 ppm is quite low, do you always go for this amount? Usually it’s recommended to go for 150 (although I don’t always get the best results with 150). Thanks!

Currently we are between 45-85, we wouldn’t be above 85 on the set up we have. That being said, the actual content is a lot more relevant than the total value.

how could you finish pouring at 45s and having the brew finishes at 02:45 with medium grind? I imagine with 26 clicks it would finish at 1:20 or so

I got exactly this result. My Comandante is fitted with Red Clix so I tried 48 clicks (24 in normal C40) and the brew finished at 1:35. I think I have to go down to 36 clicks or even finer to finish at 2:40 - 3:00.

@@coffeewithapril different ones. Last one I used was a natural processed Ethiopian coffee from the Uraga region. I've been using the 13/200 in 30circle+70centre pout technique as well as Patrick's 50circle+50centre method from brewers cup. I'd say 8 out if 10 times I get a total brewing time of 3:30min and more and it seems as if the filter chokes towards the final draw down.

Cant make 2.40-3 time for 12g/200 . Even at espresso level grind it drip in 2.10 or so... I wonder what wrong

Nothing's wrong. Draw down time is entirely circumstantial, based on the bean and roast in use. If you're using a highly solvent African, you'll see extended draw downs. If you're using a South American, you may see the opposite. For your bean, the drawn down is quick, so you won't replicate April's results perfectly as shown in his guide.

Any help guys? Cant get my brew to get past like 150-2mins. 26clicks 94c water Third wave April brewer Using 3 types of their own coffee (so cant blame the roast profiles as their own coffee should work with their device and recipe, no? All of the brews fall significantly short of time marked. Notes understandably under extracted taste as predicted by finish time. How on earth is finish pour at 45secs taking till 3 mins with such low dose and water lol????????
