Azacca is arguably my favorite hops for IPA's and Pale Ales. It is so aromatic and dank, the thing is an absolute workhorse. Great video as always! Cheers

Wow, I just bottled a very similar batch, with the only difference of using Maris Otter and combined Azacca with Amarillo, so it's good to see how the result will be like. I really enjoy your videos, it's always good to hear "Amarillo" well pronounced in English speakers 😂

My experience with Azacca was very different. My process appears to have been as well. I also used Chico fermented for a full 2 weeks. It may not have needed 2 weeks, but I never leave primary before 2 weeks. After primary I rack to a keg or bottling bucket. I scale my recipe up to have enough wort left to freeze for a Krausen or Gyle. It makes no difference whether a Krausen or Gyle is used for carbonation. Bottling or kegging is always going to clean up in a 2 week time frame. I know no one wants to wait a month for a beer to finish, but when I do this one, I find it's worth the wait. 6.5 gallon strike 70% Maris Otter. 5%Crystal 40, 4% Crystal 80, 1% Carapils, and 20% rolled oats mashed at 152. 1/2 ounce of Azacca @ 60, 1 ounce @ 15 and 1 ounce @flameout. Sorry for the long retort. I feel like you'll find a different result by changing process some to elicit something unexpected. Great Video. Azacca will compliment lots of hops, Centennial and Cascade are favorites of mine with it. Cheers.
