How to Brew Sencha Green Tea:
For this type of tea, flavor is slightly more important than the aroma. Consequently, the goal is to draw out the taste from the leaves by using water that is not too hot.
1. Pour boiling water into tea cups. This will reduce the water temperature to about 180F and will measure the right amount of water for brewing.
2. Measure tea into teapot. One rounded tea spoon or 2 grams for a 3 oz to 5 oz cup.
3. Pour hot water from the teacup into the teapot.
4. After steeping 1 minute, pour tea into each cup little by little.
5. No liquid should remain in the teapot. The last drops are called “golden drops” and they are the most flavorful part. Also do not leave any liquid in the teapot that will help avoid the second brewing becoming too bitter.
