The Chemex Coffeemaker must be the most linked and referenced coffee brewer in caffeine history. It’s on permanent display at MOMA in New York and has showed up in so many movies as a prop in kitchen scenes that there are now youtube videos devoted to the subject.
If you would just like to make some coffee, travel back in time to 1941 with Carmen Cheang and learn how to brew a perfectly, sweet cup of coffee with Dr. Peter Schlumbohm's wartime classic.
Carmen brews 20g of Finca San Antonio Chaguite for 300g out. If you'd like to brew something lighter substitute the following quantities.
Makes 2-3 cups
Ingredients
16g Whole Coffee Beans About 500g 92°C Hot Water
Equipment
Grinder Gooseneck Kettle Carafe or Cup Weighing Scale
RINSE
Place the filter paper in the Chemex brewer. Rinse the filter paper using hot water. Discard the water and place it on the weighing scale.
GRIND
Grind the coffee beans using the medium-coarse setting of your grinder.
SETUP
Pour coffee grounds into the wet filter paper. Ensure that the coffee bed is even and then hit tare on the weighing scale.
PRE-INFUSE
Hit the timer and pour 40g of water in a circular motion over your coffee bed. Your hot water should cover all the dry spots.
POUR
When the timer reads 30 seconds, continue to pour the water in circular motion gently until the weighing scale reads 230g. Remove the filter and coffee grounds. Give the Chemex a quick swirl, pour out and enjoy.
