I bought a used Large egg. I got it home and realized the thermometer was almost pegged out at 700⁰! It's hot here in Indiana, but not that hot! I thought there was no way i can calibrate that out, but i was able to, with a couple of turns of the set nut. Thanks Captain Ron!

I use an oven mitt and a box end wrench and am able to adjust it while it is in the boiling water. Fast and easy.

It should be noted while the thermometer is accuate at 212, it may still be way off at 400. To truly check a thermometer, temps should be checked at about 20% and 80% of the scale. For smoking, the difference between 212 and 250 should be minimal at best. You can check your themometer to a small degree by getting water at about 80 degres as measured by another known accurate thermometer (steak thermometer) and see if it's accuate at the low temp when calibrated to high temp. If it's accuate at one but not another, get a new thermometer. Another thing to check is precision. After you calibrate it, take it out of the boiling water (leave it boiling) and place it in cold water. After about 20 seconds put it back in the boiling water and make sure it went back to the same temp. Repeat a few times. If it does not hit 212 each time, get a new thermometer as it can't be trusted. Mine was 8 degrees off as shipped

Capt. Ron this is a great way to calibrate the thermometer but keep in mind that water begins boiling at 212 degrees but it also will be boiling if the water gets to 220, 230, etc. so doing the calibration when it begins to boil is important to this process. Let's remember too that the water will begin boiling at the bottom of the container first. This means that the averaging of the temperature across the thermometer will give a lower reading than what is the actual reading at the boiling point of the water. Your thoughts?

Ron actually water will change from liquid to gas at 212 F or 100 C but the bottom of the pot can be well above that. I shouldn't have said that the water will be "220, 230, etc." when what I meant to say is that the heat source, being the bottom of the pot, will be much hotter than the water. This is what could affect the calibration. I think you should try the calibration with a shallow pot and a deep pot and see what you get!

Thanks Ron - great stuff. I admit that in the 20 something years I have had kamado and BGE, I have never calibrated the dome therm. I will now so I can be compliant. :-) For controlling and monitoring the grate and food temps, I use the Smobot. Are you familiar with the Smobot? It is a great tool and doesn't need a fan. Thanks.
