3 weeks ago (edited) Peptic Enzyme ( you can find it where wine making things are sold). Add 1 / 8 the teaspoon per quart and soak for 12 ish hours or overnight . Shake and rinse several times the pith will slough off easily. Preserve as directed.

When you said the vitamin C was water soluble, does that mean yhe vitamin C would remain in the syrup? I just put a stack of mandarins and lychee in ninja creami jars to make gelati, mandarin has a great flavour.

No. Vitamin C is an unstable, water soluble Vitamin, it decreases in Citrus when cut and is exposed to oxygen, light or when heated. This is why we still need fresh produce in our diets and growing our own is of great benefit. Many other vitamins and fibre are still available after canning. Your gelato sounds delicious and if frozen, would keep some vitamin C for a little while.

But why pressure can? I never do, it kills everything good..mandarins are safe to water bath. Anyway, I personally prefer fermenting and dehydrating, i don't can now anymore.
