Most other tutorials mention starting off in a cold pan to maximise the fat rendering. Interesting to see this with a hot cast iron. Seemed ok, but his edges were burned and meat not done enough. Maybe start cold cast iron for 6 to 7 minutes first?

There are different ways of doing things but I always keep them in the fridge for 24 hours after slating, this helps the skin dry out. I also always start with a cold pan. This way you do not get a sear which locks the fat in, instead heating from room temperature lets all that fat come out and render. I have done it with a hot pan and the taste is still good. Try both methods and see which is the best.

Duck breast should go in to oven for 6 to 8 minutes for a perfect medium well. Medium well is excellent for duck but beef medium rare is the best way to go. This video was very rare to almost raw.

Don't be silly. Duck breast @ medium well is overcooked, and completely gross. There's a reason why every single cooking presentation online shows medium rare duck: _that's how it's supposed to be eaten._ 🤦♀️

true! id recommend you to render the fat on a cold pan on medium heat until 80% or more is melted, sear for 1 or 2 min, then throw on oven for 4-6 min

I like the cross hatch pattern, but if you put it into a cold, non-stick oven-safe pan (or keep a hot preheated cast iron pan in the oven to transfer it into) the fat will render WAYY more and you won't even see any on your slices. Yum! Also, medium to medium well is better for Duckies. (Not beef tho)

Your method will work but I find it simpler to do the souring, salting and let it rest, uncovered for an hour. Put it skin side down in a cold pan. Put the heat on (pretty) high and wait about 7 mins without touching the duck. Turn it over. The skin side should be brown and crispy but every stove top/ pan combination is different. 7 more minutes and take it out to rest. I usually have par boiled some sliced of cubed potatoes to place (not drop...I still have burn scares from the last time I did that) into the rendered fat. By the time the potatoes are getting a little crusty, you can slice the duck (on the bias and at an angle) Dump it all on a plate. I'm writing this from Budapest where everything you ear clucks, quacks or oinks so the quality of the product you get may very from the absolutely otherworldly flavours we get here.

The reason the duck is 'Rare' is because he started of with a hot pan. Burnt edges too are a result for the same reason. Always start to cook your duck breasts on a cold pan, medium low flame. You get much better results.

I like making it rare in just a pan with salt-pepper-garlicpowder. It’s incredibly simple and very quick. Then I cover it up and put it away from the fire and let it rest for like 10 minutes so the juice stays in the inside.

That's a bit shy of med rare. Skin side down start with a cold pan & gradually increase heat. Turn over & sear meatside. Put into oven SKIN SIDE down 300° for 4-6 minutes. Absolutely perfect

You burned the skin, the pan was too hot. You want to start off in a cold pan and work it up slowly to render the fat of the duck and to cook it evenly; that's the reason it looks so rare in the middle.
