INGREDIENTS
Beef
Okro
Pumpkin leaf or ugu leaf
Periwinkle
Palm oil
Dried prawn
Onion
Dried fish
Seasoning cubes
Salt
PREPARATION
1. Add the beef into the pot, season with chopped onions, blended pepper, seasoning cubes and salt and simmer for 20 minutes.
2. Cut the Okro and pumpkin leaf into any size of your choice and set aside.
3. Wash the periwinkle and dried prawn. debone the dried fish, wash it and set it aside.
4. Check the beef after 20 minutes, add more water, cover the pot and let it cook for about 10-15 minutes.
5. After 10 minutes add the palm oil, cover the pot and let it come to a boil.
6. Add the Okro, dried prawn and dried fish and allow to cook for 10 minutes
7. After 10 minutes add the periwinkle and let it cook for 5 minutes.
8. Check and add salt, seasoning cubes and pepper if needed.
9. Add the pumpkin leaf and turn off the heat. Give it a good mix to combine and your Okro soup is ready
