What a creative idea using the plastic wrap with the food process. I will be using that in the future to make clean up easier.

Looks very tasty! I would change a couple things, have you tried cutting off the hairy end of the onion first, not all the way through the root, because there is usually some dirt in the roots that gets pushed into the onion if you cut through the hairy end. Then beat the egg with a whisk, then add other ingredient except crab, transfer 3/4 of the mixture into another bowl, gently add the crab to the first bowl, gently separating the lumps, then add the other 3/4 of the mixture over the crab in the first bowl, that way the crab lumps only need a gentle fold to coat all the lumps. Doesn't make sense to pay for all this beautiful jumbo lumps just to beaks them up while mixing with the binder.

Hi Dennis. Did you clean the basil before putting it in water. My wife always tells me I must clean or rinse the basil before using it but I find it makes it wilt and I never see any chef cleaning them. Don't they come from the ground ?

I don't know that it matters either way. I've put cut basil, no roots, in water and if the cuttings are fresh enough they will form their own roots. At the farmers' market the guy I buy basil from in summer keeps the dirt on the roots when he stores it in water. I hope that helps.-Dennis

Dennis, this looks awesome. I'm going to try it soon. But I must tell you....I was so distracted by your cute apron and your apron collection in the background. Where do you get them? Do you make them yourself? If so, please share what pattern you use or can you tell me where you purchase them? Love all your videos! You do a great job of explaining and showing each step. Thanks!

Thanks for the positive feedback. I make the aprons. They're so easy, I drafted my own pattern. I learned tailoring when I was in college 40 years ago and it's a skill I never forgot. Some of the fabrics were sent to me by a friend in Hawaii. Some I bought in a remnant store. Thanks again.-Dennis

I'm glad someone besides me commented on his apron collection. I noticed them before in other videos but just lately he moved them on the clock wall that does tell the true time length of each cooking segment he does. He spends a lengthy time on them too. And he wears a apron appropriate to each dish as well. :~)). Like always I really enjoyed this video and will have to try it soon
