@@denton7773 I fry game meat all the time, you can cook it any other way you like as well but nothing wrong with fried! Deer, moose, caribou & elk is all delicious fried with some onions

I think he needs a different processor. That meat had tons of silver skin or sinew in it. I have always butchered all my deer, never took the first one to a processor and mine looks a lot cleaner, because I cut all sinew off

@@jonathanyates5198 I said the exact same thing. Once you get good at it, you can process and trim an entire deer in a couple hours and it's done the way YOU want.

The very first thing to do is salt it. Add whatever seasonings you want after that and let it sit. Preferably overnight. The longer the better. I can't stess it enough what a difference it makes.

Why do you keep referring to this meat as "tenderloin"? It is not the tenderloin. The tenderloins are the 2 tiny little strips from God, on the underside of the backbone. This meat that you are cooking is backstrap / loin.

Around where I live we call the backstrap the tenderloin and the cuts you refer to as the "sweet meat"

I live in Dickenson County Virginia, and it might be true that some call it tenderloin, but truth is that the meat inside the body cavity are the only thing called tenderloin. Outside is back strap, or top loin

Not one peice of that is tenderloin. Some of it is back strap some of it is other. None the less hell of a job with the cook i bet it was slammin i do mine up similar. Nice rip😊

Medium heat the whole way through. If you get it to hot the olive oil will burn.

I love to sear deer ham or backstrap in butter on a hot cast iron skillet. I try to keep it slightly pink when done but my missus wants it well done which defeats the purpose of a quality meal IMO. So, most of the time, we opt for the more unhealthy option of batter frying it.

I like to marinate it in italian dressing then coat it with italian bread crumbs and parmesean cheese and then cook it like you did to Medium rare or even rare. my boys used to fight over the last pieces.

Gamey taste begins when the deed goes down. In my opinion, hanging a deer if possible allowing it to drain helps taste and so allows tissue to begin breaking down, tenderizing the meat

Do you rub the meat down with olive oil before hitting it with the seasonings? Or you just put the butter and oil in the cast iron and let the meat cook in?

I rub it down with olive oil, add my seasonings and it set for about 30 mins before cooking them.

Why are you advertising this video as tenderloins. This is a backstrap . TenderLoins come from bottom side of spine just in front of back legs. Softest meat ever .
