Okay, No cilantro. ( but if you like it , you like it ) Add green pea to your rice. You should blend the boil djondjon to get more of the color. Make a stew with the left chicken broth. Add some tomato paste, add the broth back and add bell pepper and onion and simmer a little.

Quang, I know they telling u to use this and that which can be confusing. What they not telling u is that, every Haitians household they cook different and use different ingredients. For example they telling u to use Maggie (that’s if u like or eat Maggie. Not every Haitian use that and food still delicious). And cloves (u don’t have to If u don’t eat it ok, all these ingredients are choices ok). Everybody is telling u to cook exactly the way they cook, but they don’t tell u that u have a choice to use certain ingredients or not.(that’s if u like it ok). TRUST MY WORDS! U did very good, 9/10 (i don’t give 10 bcus u used the water u boiled the chicken to cook the rice which isn’t a Haitian way of making rice). But I’m sure it taste delicious Bcus I used the chicken broth like u did and made the rice wow it was good.

Great job! If you soak the djondjon overnight and then boil it (in the same water) you get a darker richer colour. Also add some shrimp and green peas to your rice - game changer!

You asked why they pull off their chicken skin? I am Western and am only guessing. When cooking legs, I find that the skin shrinks and often splits the coating during cooking. To compensate for that issue, but maintain consistency, that may be why they do it. I have never had HAITIAN food however. If they don't dry dredge their chicken ever, then I'm obviously wrong.
