I like to make this pasta dish myself. Intriguingly, I haven't known it's an established Neapolitan recipe, I figured out the recipe myself independently, as a variation of the puttanesca recipe. For this reason, I like to use some anchovies in the recipe to make sure the sauce is deep and with this special umami taste.

I would not eat octopus after I watched the Netflix-documentary ‘My Octopus Teacher’, sadly. 😅 And, Vicenzo please use black olives that are naturally dried, and not these shiny ones that are processed with biting soda. Besides real Kalamata and Taggiasche olives, regular black olives that aren’t wrinkled, are processed in a chemical process of some biting soda to get them black. Not advised. Naturally dried olives, green olives that get black by natural drying, are always wrinkled!

Yep... I watched the whole thing... shrimp would be much better. Those baby octopus might as well be mice... not attractive at all. My kids would get sick looking at that and refuse to eat it, and they are all grown now.

My experience has been that you have to either cook octopus for a very short or a very long time in order for them to not be rubbery.

I was worried the octopus was gonna turn out too hard but it was quite the opposite! I’m so confused because octopus don’t need to be cooked for so long and I’ve always thought that it would get rubbery when cooked too long. Great recipe, by the way!

I am wondering in Chinese cooking small fresh (not frozen) octopus is stirred fried for less than 2 min on the high heat or quench in boiling water for 1min I am wondering if I can use similar method to take out the MSG from the DRIED octopus (look up Chinese/ASEAN cooking use dried octopus to create MSG taste for Hoisin Sauce) 1. hydrate a small amount of dried octopus (1/10 ratio relative to fresh octopus) 2. stir fried fresh octopus with garlic on high heat for 1min 3. cooked the hydrated dried octopus in tomato sauce in the pot for 1 hour (since it is tomato ... use stainless steel or ceramic wok... should not use carbon steel) and cooked tomato in the water to get the similar result with a twist: fresh/tender small octopus instead of very very cooked down/tender octopus

I live in a landlocked area of the USA. I wish I could find such fresh seafood as this to cook with. Unless I special order ingredients ($$$$), it is not possible to make something like this. We get farmed catfish and salmon, tuna, shrimp from multiple places, frozen crab from alaska, and basic bivalves like clams and mussels at our grocery stores. If we saw an octopus, it would be frozen and probably wouldn’t sell, because most people have no clue how to cook one. I think either very hot and fast, or very low and slow.

I finally managed it! Using fresh spaghetti instead of the dried one made the difference. In fact, I still taste the pepper as I write this.

Looks amazing! I am sure it taste great too bad I can't taste it. In my country I can't find Octopus in good quality because it's imported and only in certain places as this is not Kosher. I want to come visit Vincenzo, I want to eat from his hands authentic Italian dishes I can't normally have in my country.

Cephalopods can be a bit challenging to find, but when you do, they're worth it! 😄 It does have some similarities to puttanesca. If you try the recipe, let me know how it turns out for you!

Dear Vicenezo! I love your channel and have used your guidance in making authentic Italian food at my home in London. I even cure my own Guanciale to make carbonara! But I have a few specific questions... 1- I noticed you used pitted olives in this recipe, (as you did in a recent recipe for a sausage pasta). I have always assumed it's better to buy whole olives and pit them yourself, as the flavour is far superior... Even though it takes a bit of effort and time. Can you please expand on why a pitted olive is perfectly fine for this dish? Secondly, I loved your video on different pasta brands. I have always bought De Cecco as it is widely available, and other artisan pasta (specifically unusual shapes) when I can find them on sale at a discount store. I would love a video on which olive oil to use... I normally use normal olive oil when cooking and a more artisan one for dressing salads etc... Yet I notice you always use extra virgin olive oil in your recipes... Can you explain why you prefer this as opposed to normal olive oil when cooking? Much love!

But in that video he didn't really address my query, which was about using normal olive oil as opposed to extra virgin olive oil when cooking (Many Nonnas seem to use regular olive oil when cooking as I understand the flavour of Extra Virgin is often lost when using it to cook with) I'm hoping he'll drop a video on this issue soon...

I’m trying to figure out how to find a good source for the octopus. Usually with baby cephalopods, they are aquacultured. As in farmed. If anyone in the states has a preferred source please let me know! I need this dish in my life lol. Also, question for you Vincenzo. Is there any prep required? Or is everything so small in the babies we don’t need to remove any hard parts?

I'd go a bit further and say, get the olives with the pit and take the pit out yourself. They're much better
