This is my first attempt at cooking ofada stew also known as ayamase stew and deigner stew.
Ofada stew is a local Nigerian stew served with local Nigerian ofada rice but it can be served with any rice of choice.
After making this ofada stew also known as ofada sauce by some, feel free to serve with any rice you have and enjoy. If you are outside Nigeria, where there is no leaves to wrap your boiled rice, just serve in your plate and enjoy.
INGREDIENTS FOR OFADA STEW
Green bell peppers
Chicken or any meat of choice
Stock
Onion
Chillies (optional)
Bleached palm oil
Vegetable oil (Optional)
Roughly ground Crayfish
Fermented Locust beans
Hard boiled eggs
Salt to taste
Seasoning cubes to taste
Dried fish if you have any. I didn't add any dried /smoked fish here but you can add to the stew if you want.
