This is the best video I’ve seen on making a traditional Lao sticky rice! I had done much “trial and error” cooking and two issues I always had were cleaning the bamboo steamer and the rice getting too mushy. You nailed both of these challenges for me with the cheesecloth and the aerating of the rice on a rice bag mat covering the bamboo plate. Thanks SO much for this!!! 🥰

when i was a kid my family (mostly white hillbillies and some branches of native America) would make this stickyrice. they had the basket and pot and everything. we would have a pot roast to go along with it- a large rump roast, 2 large cans of cream of mushroom, a packet of limpton brand onion soup mix, onions, carrots, and soy sauce for salt. plus half as much water as cream of mushroom. it would be slow cooked all day until the fat had melted and the meat fell apart with no effort. mix it all up. Wed have a large pile of rice that wed roll into balls and dip into he roast, then when the rice was getting low wed mix the rest of it into the rost and finish it off with a spoon. we'd sometimes make it into onigiri balls which we called rice bombs, but when I learned of the origins of stickyrice and onigiri and all that I managed to change the name in my family to "Hoedown-giri"

Interesting. I see no differences in method from Thailand. When in Chiang Mai earlier this year, I bought a couple of 'huad' bamboo baskets for cooking sticky rice, as well as the aluminum pot for the water. Unfortunately, my Filipina wife is not keen on sticky rice--nor spicy cuisine and I'm the cook in the house. Sad for me! I like your idea of using the cheesecloth basket-- not to mention getting one of the sticky rice serving bowls made of bamboo. Even if I don't use it often (!!), it's a nice bowl to serve jasmine rice in anyway. Thanks for the video!

Thanks for sharing! I say lao sticky rice as the method originated in Laos and then spread to Thailand. Many people in Thailand still consider all the equipment and this type of rice to be from Laos. Hope that helps.

@@SaengsKitchen huh. could be. I believe that at one point in the middle ages Cambodia or Laos was the center of an expansive empire through SE Asia so maybe the method and technology did originate there.

Wow, I have a bag of sticky rice, prob not Loa rice, but I don’t have the beautiful wicker steamer. Is that wicker? What is wicker anyhow?! So I will prob try using some cheesecloth in my stainless steel steamer. And see how it turns out. I def will have to figure out something to dip it in. (Actually bought it to make sushi…which I’ve never made before, but thought sticky rice? Maybe?!) thanks for the history & tutorial! Really enjoyed seeing how it is grown & harvested!

Do you have to steep in it not boiling water for an hour and THEN steep in boiling water for 5mins or can you just steep it for 5mins in boiling?

Let the rice sit in room temp water for an hour. Then steep in boiling hot water for 5 minutes. And now it’s ready to steam. Hope that helps.

Look for sweet rice or glutinous. Both are the same. I like using 3 ladies brand. Let me know if you have other questions! 😃

Wow what a process. I’m from Cambodia and we just cook Jasmine rice with water. Does Lao have a particular brand that you can just cook in a rice pot with water to skip the long process? Thanks

Lao people usually eat sticky rice and it’s traditionally steamed. Sometimes we eat jasmine rice too and cook that in a pot with water

I think any deep-ish pot will do, you may need a rack inside so the basket doesn't touch the water.

Hi, can you please confirm I’ve got the right instructions..for cooking sticky rice.. in water overnight then rinse and cook 15+15 or 2/3 hour in water and 5 minutes in hot steaming water then rinse and cook.. Is this right? Thank You so much.. ..following You @saengdouangdara
