Ingredient details as below -
For Marination
Mutton Shank -Ribs 800 gm
Saffron- 1/2 Tsp
Yellow food colour 1/4 Tsp
Mandi Masala 2 Tbsp
Lemon juice 1 Tsp
Salt
Oil 1 Tbsp
(Marinate for 6-8 hours)
For Yakhni
OIl 1 Tbsp
Mix whole masala 1 Tsp
1 Black lemon (Main Ingredients)
Water as required
(Cover and cook for 1-1/2 hour)
For Roast
In a heat pan add ghee, Place muttons and roast on high flame for 2 minutes each side.
For Rice
3 Tbsp
5-6 Black pepper
4-5 Cloves
6-7 green chillies
1 Inch Cinnamon
4-5 Green Cardamom
1 Tsp Crushed garlic
1 cup chopped onions
1-1/2 Tsp Mandi Masala
600 gm Basmati Rice (Soaked for 1/2 hour )
Add Yakhni stock and cook until done.
Mandi Masala
1-1/2 Tbsp Coriander seeds
2 Tbsp Black pepper seeds
12-15 Cardamom pods
1/2 Size Dried black lemon
8-9 Cloves
2 Inch Cinnamon Sticks
1/2 Tsp Cumin seeds
1/2 Tsp Turmeric powder
1 Tbsp Kashmiri Red Chilli powder
