TENDER JUICY PORKCHOPS
Serves 2 people
BRINING SOLUTION
2 tbsp Salt
1 tsp Ground Black Pepper
1/2 tbsp Thyme
1 tsp Paprika
1/2 tsp Cayenne Pepper
1 tsp Basil, dried
1 tsp Oregano, powdered
3 cups Water
1 tbsp Whole Peppercorn
3 pcs Bayleaf
4 cloves Garlic
2 cups Ice Cubes

2 pcs Pork Chops (approx. 400 g)
1/4 tsp salt
1/4 tsp ground pepper
1/4 tsp paprika

20 ml Cooking Oil for Frying
1. In a bowl, mix together the spices: salt, ground pepper, thyme, paprika, cayenne, basil, and oregano.
2. In a sauce pan, mix water, whole peppercorn, bayleaf, and salt.
3. Add in the spices just before the water boils. Mix well. Turn off the heat.
4. Pour the brining solution onto a tray / bowl. Add in the ice cubes and wait til they melt.
5. Add in the pork chops. Make sure it's completely submerged.
6. Seal the tray with a cling wrap. Put in the refridgerator and let the meat brine for 2-4 hours.
7. After brining, take the meat out and let it dry. Cut shorts incisions along the pork's skin and fat.
This is to prevent it from curling during frying.
8. Pre-heat pan, pour oil.
9. Season the pork chops with salt, pepper, and paprika.
10. Fry the porkchops. Flip and cook until the chops are golden brown on the other side, 1 to 2 minutes (make sure no pink juices remain).
Cooking time will be about 10 minutes depending on the thickness of the chops. Avoid overcooking so it will remain juicy inside.
Best served with garlic rice, tomatoes, and spiced vinegar! Ketchup will also do!
